Multiple factors, 1) that's his streaming personality 2) he is playing chess at quite the high level (compared to most of us viewer anyway) in a fast time control which requires maximum attention, stress you out, and doing it while streaming is even more difficult, and there's just the natural frustration of not having a good position or not liking it. 3) Have you been playing chess? it can make you quite annoyed with yourself!
