So I fell out of my chair when you said you never made fried chicken. I got back up and continued the video. Fell immediately back out of the chair when u said u hadn’t made coleslaw. I was shocked by that, but I also have never fried chicken. I have never eaten meat because of a medical problem so my husband cooks all meat that isn't pressure canned. I won't cook without pre done meat. I've ruined too much food lol.

BECKY HONEY I NEED TO GIVE YOU A SUGGESTION. As a 60ty something Grammy I have learned a few tricks when washing produce. When washing fruits & veggies also use a big bowl with apple cider vinegar & water to wash your produce. Use 1/4 cup of ACV in a large bowl with water. Let soak just like 3-5 minutes then rinse off under running water. Then lay out on your clean dish towels to air dry. This kills bugs & germs that are on your produce. Also it will make your produce last longer. Even your strawberries & berries last longer if prepared this way then stored in quart jars with a lid. Thanks for sharing all you do. Gonna second this. Berries especially keep longer when rinsed in vinegar water, and anything keeps longer if it's dry in a glass jar! Cilantro lasts ages if it's very dry in the jar. Glass keeps things colder!

Same suggestion I toss my berries with a little distilled white vinegar when rinsing them as well and they do take off any chemicals and last longer!

How about a "use your garden" challenge? Maybe every day must include at least 1 fresh veggie dish. One thing that a number of beginning gardeners who have grown up with a fully stocked, full service grocery store face is learning to use the produce at hand as it comes from the garden.

Hi Becky, I'm a fairly new subscriber and I love your content. When I make chocolate chip oatmeal cookies and the recipe calls for 2 cups of oatmeal, I substitute 1 cup of the oatmeal with 1 cup of granola. Try it...it's so good. Small way of getting through some of your bulk granola supply.

If you've never tried salads in a jar, they're amazing. Put the dressing in the bottom, vegetables in the middle, and lettuce on top. Put them in mason jars. I make 5 at a time and they keep beautifully.

I used to do this for my lunch when I worked in an office. Its a huge money saver. Those pre-made salads in the crisper are like $5.

I have done this as well. Hearty stuff on the bottom, carrots and tomatoes type things. Then lettuce then cheese and meat. Mine never lasted more than 2 days though. Everyone loves to just grab, shake and eat.... 🤷‍♀️... I don't cry over them making healthier choices. Lol

I admire the thought of a pantry challenge to learn where I may have missed something important to stock. However at this stage of record inflation at a 40-year high, I don’t believe it is wise to stop purchasing food to stockpile right now. My husband and I live high in the Sierras and only go down the mountain to shop about once every two weeks, and we try to combine those days with doctor’s appointments. Yesterday we stopped at a u-bake pizza place where two weeks ago the 1-topping pizzas were $6 each, and yesterday they were $12 each. The local grocery store had raised their 6-piece fried chicken bucket from $7.99 to $13.99 in just two weeks. I would not advise stopping your grocery purchases right now, because in a month they’ll likely be much higher.

Ohmygoodness Becky! I just sat myself down this morning to plan out my pantry challenge! My husband's company just restructured their payment process for the salary workers. That means the pay check he got 3 weeks ago will be it until the last business day of June! We have all of our homestead, animals and three sons to feed. We do not have credit cards and we do NOT want to dip into savings so I'm going to challenge myself to feed my family from my pantry, garden (my zone is just starting to produce seedlings) and freezers. We raise laying hens & meat animals so I'll be able to harvest those as well❤️ I have zero social media so this is my girl hang out spot, I love when you say you are doing things with us just as if we were there with you!

Hi Becky! I use my broccoli stalks in asian dishes. I just slice them thin and use them in place of water chestnuts! Fried, boiled, roasted or raw! Yummy!

When I have ready to eat salad in the fridge, my 9 year old will help himself to a salad. He was one of the reasons I tried to grow leaf lettuce in a pot inside this winter. He would cut his own to make one.

A tip: I cut the bagels in half and the English muffins in half ( they kind of are already) and then freeze them. Then you can toast from frozen if you want as they are halved already!

I decided to do a challenge recently. I turned 13 1 gallon ziplock bags into tomato soup and froze that. Reduced my freezer used space by tons. Lol... next on my list is a boat load of strawberries that have been frozen in vacuum bags for about 2 years now. Still look good, so jelly/ jam session soon for me. But there is vacuum packed meat that has been in my freezer for quite a while now that I want to get moved on... just a get things used up challenge. 😁

Becky, you can get those lids from Lowe’s for like $7-8. They have them and the food grade buckets in the paint section beside the non food grade buckets.

Thank you for sharing this information. I like to pick out certain things myself & containers for food(s) is one of them. I want to make sure the plastic is HDPE plastic as this plastic doesn't leach chemicals into the food stored in them. 🙆‍♀️❣👍

Yes, I agree. I’m Italian by heritage and this is how Italians cook esp those in Italy. They cook using what’s in season at the time. Always fresh with simple ingredients Delicious!

On my 5 gallon buckets, I taped plastic sheet protectors, horizontally, so I can slide the labels in and out and don’t have to worry about tearing them

i make mushroom powder from tons of different varieties of foraged and store-bought mushrooms! Funny story- my 13 yr old grandson constantly told me that he HATES mushrooms, he states that he can "sense" them in any food...lol, I recently shared with him that I have been feeding him mushrooms since he was a baby and he has always liked my food. His response was "well, I guess I love mushrooms then." I think with him it is a texture thing. :) I also make mixed greens blend that has EVERYTHING in it, dandelion, lettuces, kale, strawberry, blackberry and raspberry leaves, comfrey, squash leaves the list goes on and on... I powder them all up and along with the mushroom powder, put it on and in every savory application that I make. Huge flavor. :)

I have really liked using Einkorn flour. I discovered it when someone brought Einkorn cookies to a Christmas party. I shared them with a daughter-in-law who can’t eat gluten and they didn’t upset her stomach at all. She’s not celiac but has some other real gluten sensitivity issues…. I was surprise she wanted to try it but she did and it was a happy discovery.

I've had patients who clued me in to ancient flours. They were told they had gluten allergies or intolerance, but surprisingly found these flours and had no problems! One of them mentioned a theory that the wheat today is sprayed and maybe that's the reason for the intolerance. Interesting subject.

A tip for your carrot sticks (this also works with celery) store them In a bowl with cold water, change the water once a week and it will last you easily 2 weeks fresh and crispy 😁

I like that you concentrate on quality foods. Just saw a RU-vid where the couple was in Sam’s complaining about the price of food but their cart was filled with processed muffins and wasted calorie items. We all need a treat but sacrificing good quality nurishment for empty calories AND complaing about the price is nuts.

Yep! If you're diet is heavy in animal products & processed foods, you'll take the hit on prices. But if diet is more whole foods plant based, pricing hasn't changed much. Many don't recognize the difference between "need" versus "want".

I'm catching this one late but my 2 cents on the baby carrot are: they are regular carrots that have been cut, "polished" and treated with chlorine bleach. It is claimed that the chlorine evaporates as it dries and all that's left is water but that's what causes them to have that dull, watery flavor. Good luck with the fried chicken!

I've tried those "baby" carrots a couple of times, and they got slippery slimy in the fridge, after just a few days. No more of that, thank you! Perhaps they use chlorine to try to keep them fresh longer? Maybe the chlorine kills the carrots along with any evil critters that are targeted? Who wants to eat toxic carrots from a plastic bag? I scrub the critters off fresh carrots again, now. When will they quit messing with our food? Ridiculous. Here's to Our Becky! 🥕🥬🍎🥔🍍🥗

Just a fyi, if you tear the lettuce instead of cutting it with a knife, it will stay fresher longer. It wont wilt and turn brown.

Oh! Also! Salad prep stuff! I used to pack salads for lunches all the time. Best thing to do for ingredients that may change the salad, or be changed by the salad, is to put them in reusable muffin liners! I've got a bunch of silicone muffin liners in different sized, and you can nestle them into the corner of the container and fill them with things like the pickled onions, or the shredded cheese (Which can sometimes get sweaty or clump depending on how long it's in the box.), or boiled eggs. Then, you just dump those and the dressing in when it's time to eat, and don't have to worry about remembering to add any missing parts!

Once I got my starter going and active, my sourdough starter went to live in my frig and I can go weeks without feeding it and can even bake with it without feeding it first. I do keep a dryer, thicker starter than most and I feel like that helps keep it alive for so long without daily feedings. I killed so many starters on my counter until I found this method. Don't give up, sourdough is so worth it!!

Yes to the pantry challenge! I’m only one person and I’m so overstocked right now. NO grocery shopping in June is my first challenge. No matter how good the deal is, I’m literally out of space. Yes, I’m very fortunate. For some reason I decided I needed to prep starting summer of 2019 and did all the couponing stuff. When the pandemic hit, I was in good shape. I backed off a little late 2021, learned to can and dehydrate. Then of course, inflation 🤦‍♀️. Still in really good shape other than maybe TP now, lol. I let that go for some reason 😂.

I think because she said she’s not going to be placing too many more bulk orders that it’s bc she’s not going to be at home much? Possibly either traveling/or maybe doing a multi day or multi week course somewhere on homesteading skills (or maybe bee keeping)/or moving… but I can’t really see her moving when she’s investing so much energy into her garden. I’m dying to know too… We’ll just have to wait and see. 🙃

You need to try bamboo paper towels. They are washable and last for months. They feel like felt and very thick. Love them.

Great video!!! I absolutely LOVE having salads in a mason jar. Layer it so your dressing is on bottom, then your protein, then lettuce and cheese on top. You can even put your dressing in a washed out fruit cup under your mason jar lid and it’ll stay in place.

A note about ordering produce from Azure. I've been ordering from them for over 20 years. Take into account how far you are from their facility. (I realize you're close by, but this is for others.) Where we live means items are on the truck a guaranteed 4-day minimum. I tell others that soft, organic produce doesn't travel that well; firm produce such as potatoes and such are fine. We have stores here locally that I purchase most of our produce.

Thank you for sharing your grocery treasures and your kitchen prep time with us. I love having chopped veggies ready to go, in the fridge, too. It makes life so much easier! I was surprised to hear you've never made fried chicken. Oh my gosh, Becky! It is SOO good!!!! Put a little baking powder in your flour mixture along with your favorite spices ( I use garlic powder, onion powder, salt, pepper, and paprika), dredge your chicken in milk or eggs, then in the flour, twice. It makes the coating extra crispy. If you're frying in oil instead of baking, when your chicken floats to the surface of your pot of oil, it's done. Have fun and enjoy! It will be so yummy!!!!!!!

The English muffins are some of the best I have ever tried. I reorder them every time! I participated in the January pantry challenge and I was just saying to my husband that I'm starting it again For June-August. I need to be more intentional on getting more jars emptied to refill them once my garden starts producing. My freezer space also. So I'm only buying dairy and eggs right now until end of the season besides special occasions. Minimal fresh produce as well since I don't grow my own fruits yet.

Awesome tip I didn't learn until I was in my 40s is ...if you use a plastic lettuce knife your lettuce doesn't brown as quick! The metal of a knife has a chemical reaction with the greens that causes the browning 😀

Pantry challenge seems like a great idea! Since I like using up my home canned items within 2 years, I decided to do a mini-challenge to myself by pulling out my pantry anything 2 years or older and either using it up in the next 2 months or tossing it to the chickens. This will free up canning jars I could use for canning things I will actually eat.

For meal prep salads we always put the heavy vegetables in the bottom like carrots, celery, etc. This way the lettuce doesn't get bruised as fast and stays out of any accumulated moisture on the bottom. If you have an older refrigerator where you put your meal prep salads can make a huge difference -- cold but not frosty (the door is too warm for us). Edit: spinach and hearty greens work great, but I prefer romaine.

You might read all about sour dough starter on King Arthur Flour Blog. I was reading the other day that almost all defunct starters can be resurrected unless it is actually rotten/spoiled. I always kept mine in the frig which helped some, but gave it up because I wasn't using it. I also just read today that you can make a 2 ounce starter and that lessens the starter waste. Another thing. I noticed the other day you mentioned you were going to wash the eggs after you gathered them. I just read the other day that that is not a good idea, because that washes off the protective film layer the chickens put on them, and then bacteria can get through the shell. I love your vlogs and enjoy watching. My husband won't eat 98% of what you make, so I just enjoy watching, and cook wondrous things only in my head.

I've been on a salad and yogurt parfait kick, I love it, although harder to do in the winter months. I never tried it with peas, but I will it looked yummy. I also add in mushroom, cucumber, hard boiled egg, bbq chicken or like panko chicken. They have a salad season grinder that takes your salad to a whole new level so you don't need as much salad dressing it's called "salad seasoning " by the spice depot ingredients are black pepper, salt, dehydrated garlic, naturally occurring sulfites, sugar, mustard seed, dehydrated onion, rosemary, dehydrated chive and basil. Oh I also started putting blueberries on top, yum. Great hall, thanks for sharing 😊

King Arthur Baking has great support if you need help! They helped me get my sourdough starter going initially when I was having an issue. I’ve found my starter very forgiving when stored in the fridge. Hooch (the alcoholic gray liquid that accumulates on top) doesn’t mean it’s dead. Stir it up or pour it off and feed as usual. Jack from Bake With Jack doesn’t even feed his starter prior to storing in the fridge. I’ve adopted his method with success. So easy and less cast off starter to use or waste!

Hey Becky! You should look up a dry sour dough! You keep it in the fridge, only feed it when you need more, and there’s no discard! Super excited you’ve decided to try out einkorn. We’ve been using it for about a year and a half and we love it! Especially in sourdough! Good luck🤗

put a paper towel in with your cut lettuce. it will soak up the water and keep it crispy longer. on the premade salads, place it on top. but store them upside down in the fridge. then can just remove the paper towel before adding the dressing.

I use a Wrek Jar for my grandma’s starter , it’s over 100 years old . I have almost killed it buy it came back . I have a tulip shaped Wrek jar for my stater . I gave the same to my daughter for party of her wedding shower gift, her great grandmas starter .

I made your no-knead bread with einkorn flour. It is great. I love it. You do need a little more flour or use a little less water but other than that it is great. Einkorn does have a higher carb count. It is harder for a diabetic person to process.

If you put dressing in the bottom of a mason jar and put your salad ontop of the dressing in the mason jar it stays fresh. Then just skate up the mason jar when your ready to eat it

With my sourdough starter, I feed it, let it double or triple, and then I put it straight into the fridge. Every month or so (whenever I remember) I'll pull it out, discard (feeding the dog) most of it and feed it and repeat. If I see it starting to have liquid at the top, I know it's time to feed it. I've kept my starter alive and very happy for over two years now. I will even bake directly from the cold starter from the fridge. It might take longer for the first rise, but I've never had it not work well

@@zormier2002 if it's gray (but smells OK) I do. It means I went too long without feeding. I discard any of the starter that is off color. If it's tan, you can either discard it or stir it in. If you discard it, it will be less sour, if you stir it in, it's will be more sour

I soak my chicken overnight in buttermilk + 1/2 bottle Crystals hot sauce (reg) a good amount of salt and garlic powder.. When I go to get it I drain it dip in flour let it sit 15 minutes before I fry so the crust stays on ..Yummy I'm from the south.. (Georgia)

Have you heard about dehydrating your sour dough starter? Crumble, and store on the shelf in Mason jars. Then rehydrate as you need. There are instructions in Pinterest.

For sourdough starter, once you get it going, discarding and feeding once per day, about 7-10 day in, then you can keep it in the fridge and only feed it once every 7-14 days. If you make bread once per week then feed it, use for bread and put it back in the fridge till next time. That reduces waste and it reduces your chance if killing it 🤣

We had carrot and celery sticks with lunch everyday, during kids camp. The carrots were washed, peeled and cut into sticks. They were then put in a gallon plastic bag with about a cup of water and a tablespoon of brown sugar, placed in the fridge overnight. Sweet!

Yay another pantry challenge ❤️ I went about 6 weeks without having to really stock up until a few days ago on Saturday! I’ve been shopping my freezer and pantry. I did a huge project of reorganizing my kitchen, new stainless appliances. Our house is 8 years old so we sold our appliances that came with the house! Then I repackaged my spices! Prayerfully next is redecorating our guest room! Landscaping project is being scheduled as we speak! Yes you motivated me 🙏❤️😆and my birthday is soon! Big birthday, 65 ! Lord willing 🙏

I really enjoy watching your channel. I teach culinary to high school students and some nights I am out of energy to cook at home. I love hat you plan ahead. My boyfriend takes Leftovers for his lunches as well. I typically do a small salad and a smaller portion of an entree & sides for his lunch. At the beginning of covid he took the whole bottle of ranch to work. I have learned since to portion out his dressing so there is some when I am home. I have been enjoying making Greek dressing though for my salads. You have inspired me to learn how to can and freeze dry. Becky you can make your vinaigrette in bulk and store in the fridge. I used to do it for friends all the time who loved how I make mine. Just be aware that the oil will solidify, so pull it out a bit before you want to use it so the oils warm up. Saves you having to buy premade with less than ideal ingredients.

Hey Miss Lady! I stink at making the actual fried chicken, BUT my marinade is awesome! So soak the chicken overnight (up to 24 hrs) in TEA, regular black tea. Drain in am, then soak in buttermilk w/ 1 Tbsp hot sauce, up to 12 hrs. Rinse and pat dry, allow to come to room temp before breading and frying. Great energy to you and your kitchen angels! I ordered some onions and garlic from azure a couple months ago. The onions were fine but the garlic was less than impressive. I was disappointed in that. I hesitate to buy too much produce from them too just because our family of 5 doesnt go through that much produce either. I do make mirapoix and vacuum pack it for the freezer and that is a big time saver for soups and just adding a boost of flavor and veggies to lots of dishes.

Hi Becky! I've been enjoying your videos very much! You're a great motivator...thank you! As far as the weevils I have read that you should sustain the freezing for 72 hours up to a week. This will ensure that all the life phases of the weevils life (egg, larvae, pupae and adult) are addressed and neutralized. Also other insect's similar life phases can be addressed using this length of freezing. I once had a terrible weevil infestation after a 2 week vacation. The original source was a small bag of gluten free hot cereal, the infestation was quite ghastly and had of course moved into other products like cereal, bags of beans etc. That was 6 years ago and after I spent hours scrubbing and throwing away everything in my cabinets. Ewwww and gross! 😰 I now err on the side of caution. 72+ hours in the freezer...grains, flours, beans, peas etc. They all go in and are stored in glass with tight lids. Thanks again. God bless!
