Hi Marion, being a northern Chinese, my grandma has always taught me to whisk the meat a lot more generously with a 1:5 portion of water/stock adding into the fillings to achieve a ‘pasty’ form. Otherwise the fillings will not be moist and juicy enough.

Wow!! I love dumplings so much,,, we call it Mandu. It's kind of soul food for not only chinese but koreans, too. When I was young, I used to make more than 100 dumplings with my mom and grandma.. so yummy I bet he chili oil make the flavor richer and more savory~~~YUM 😋😋😋💗💛💚

With the ratio of 80% fat and 20% meat the color of that minced beef should look almost whitish if I am not wrong. @marion please do let us know which grocery store did you find that from please ship it to US too I would love that.

Your mum is DA BOMB. Happy belated Birthday to her!!! Marion, do you ever make soup dumplings? I had them a lot in Hong Kong, but that's Guangdong Province cooking, eh? I had these northern Chinese dumplings there also, but they're not as commonly found in HK as the Guangong dumplings. So good!!
