I'm so excited to share my latest soup obsession with you - this soup is food for the soul! It's a meatball and vegetable soup (very similar to albondigas, which is a Mexican meatball soup). Let me know what you think! XO - Dani
It is so funny that you mentioned that it is similar to albondigas!! That was going to be my first comment, lol. Growing up in Northern California, my Mom would make albondigas alot. My kids love it. I'm sure they will love this healthier version also.
It reminds me a lot of a Mexican meatball soup called “Albóndigas”. My favorite soup growing up . Similar ingredients, we add fresh mint herbs to it and it’s amazing .
This is what so many Mexican kids come home to on cool day…lovely memories! Anytime my daughter has a cold or feels she needs something comforting she asks for albóndigas. I actually still request these from my mom because mom’s cooking is always a joy
It’s what mom made alll the time when we were growing up! Traditional Mexican family with 7 kids! She still makes it. It’s one of my all time favorite soups she makes for us ❤️
I made this soup but instead of cabbage used spinach at the last 5 minutes. Also since I don’t like cilantro added oregano and also Parmesan cheese. So good. Thanks for all your recipes. I have made many and always love how the dishes turn out. Always delicious.
It similar to our Iraqi rice meatball soup. We add thyme and mint to our rice meatball. We use any vegetables on hand like eggplant, zucchini, carrot, turnip and swiss chard. Every time I don't know what to make this recipe comes to my mind. It is that good and easy :)
We had something like this when I was a kid but we couldn't afford fresh vegetables for 11 people. Mom used canned vegetables and it was yuk. Interested in trying this recipe because of all the vegetables. Still expensive on a limited budget but looks like it might make four or five meals. Thank you. I can smell it cooking now.
Perfect timing. I’m under the weather, praying not as serious as may be G-d forbid. Basically on purées. Friends making me puréed turkey soup but extremely bland. So I’m using your recipe sans meatballs & cabbage. Love cilantro (mint too!) so this is all veery inspiring. Deepest gratitude for this & all your terrific videos & content!!Wishing you all well🙏🌿💕
O my goodness golly I made your Meatball VEGETABLE soup April 29th and it is so fabulously delicious...it makes so much for 2 people...I'll have to cut the recipe in half...but I'm definitely enjoying it now!!!!!!! Thanks so very much for sharing this awesome recipe... Everyone have a blessed and joyful week!!!!!!!
OMG! I made this soup tonight! I used plant based meatballs and homemade veggie broth. Amazing results! I love this recipe!! Thank you so much for sharing! Guys/Gals make this one! So so good! It makes so many servings and it’s inexpensive! Knocked but out of the park with this one! Love it 😍
My family and I love this kind of soup. We didn’t grow up eating it, but had it at friends homes occasionally and began making it several years ago. I will add the cauliflower rice as you did to the meatballs now. Thank you for the good idea!
Thank you Dani for your beautiful recipes. They are well laid out and thoughtfully curated. You are also a great teacher with a warm and soothing voice. I have used many of your recipes and they are awesome. I send you and your beautiful family good vibes. Keep on shining!
Yes! I'm making your turkey butternut squash soup again at this very moment and making your stuffed pepper soup again on Sunday! Easiest meal prep. Thank you!
We serve in our home a Mexican soup similar to this called Albóndigas 😋. We don’t add cabbage or zucchini though; these two veggies however, we do add them to our chicken soup. Gotta try your version, looks delicious 🤤 🙋🏻♀️💕
Thanks for sharing! When I lived in CA my hubby and I would go to a local Mexican restaurant and they made the BEST chicken soup which also had cabbage and zucchini. SO good!
I do it very similar with grass fed beef and Turkey same veggies but also add chayote , I instead of cilantro I add fresh mint and oregano. We love them.
We had this a few nights ago. It was so good! Next time I'll put the veggies in at different times...carrots with the meatballs, cabbage, then zucchini for just a few minutes.
I can't wait to try this recipe - I'm a big time soup lover! Especially right now with our chilly Northeast weather keeping us indoors. I'm also one of the small percentage of people to whom cilantro tastes like soap. 🤷🏻♀️ I'll be trying the mint substitute - it sounds delicious!
I’m so glad you mentioned a company in Jersey that has great quality meat. I get Butcher Box and I have been wanting to try a local company but wasn’t sure about how good it would be. Definitely will check them out!! Stay safe in the storm!! I’m excited for it!!
I was SO excited to find this farm. And while I love Butcher Box - they source from all over the world. Cattle Cotton Co - is just this one local farm and I found the meat to be notably delicious! Let me know what you think if you give them a try.
we grew up with my mom making this soup. She got it from our mexican grandma who got it from her mom . 🥰 It's called albondigas! they always made it with ground turkey and ground pork meat combined. It is soooo yummy and very cozy! 🥰
This is a beautiful version! I love the veggie combination used here. My mom’s albóndigas version from México, City and Michoacán is quite a treat. She adds real rice and a small piece of egg in the center. Also epazote, a special prehispanic herb. It’s a magical dish.
Don’t really like cilantro, but after making this soup discovered I LOVE cilantro! I made this with turkey and added the cauliflower rice but it wasn’t sticking. I added bread crumbs, just enough to bind. This soup is a 10 thumbs up. So good. My family loves it too.
Thank you, Dani, I love your recipes and the healthy eating ideas. The vegetables prep is brilliant, I'm lazy to cut up a salad often and now to have them all ready in the fridge is a great idea !
Savory & Yummy! Perfect for the winter storm that's coming in this evening. I cut the recipe in half, as I was cooking only for me, and substituted with bison, beef broth & parsley. I will cook this soup recipe again. It's so easy!
As an Italian, watching you make the meatballs then cook garlic, onions, & tomato together was extremely satisfying! ❤ PS: I'd alter this by adding a tablespoon or two of Italian seasoning or just some basil & oregano. =)
I’m Hispanic and we have a version of this soup called Sopa de Albóndigas👍🏼 your version looks so delicious 😋 thank you for the recipe. I will definitely make this soon !
It's taste amazing!!! I did have to switch the beef for veggie meatballs and beef broth for homemade vegetable broth cause family and I are vegan. Veggie meatballs worked great with this recipe. Thanks lady🙂🙂
Thank You! Thank You! Thank You! You are the first person to have made nutritious eating so pleasurable and exciting for me because of recipes like this. You're changing my life for the better Dani and I am truly grateful.
absolutely fabulous soup , thank you! Souper bowl Sundays with Clean and Delicious, your recipes are all so great and easy. thank you so much. Hugs from Goetzingers on Haida Gwaii
The soup was wonderful: light flavor because I used turkey Italian sausage. I don’t do zucchini, so I used turnip. The meatball recipe makes more than enough for the soup, so I’ll replenish the soup with more meatballs over the next day or two.
Wow my family loves this soup. I used elk to make the meatballs and they are so delicious. More soup recipes please. Thank you, Dani! Cheers from Canada. 😀
Yum 😋 Dani!! I'll be sharing with my Mama and friends. I do buy grass-fed ground beef myself, and Love Cilantro ❤️ I'm big on Organic. Thank you so much for sharing your Delicious Meatball Soup. A forsure Winner! 😊
