My secret for that true minestrone taste is basil oregano thyme and sage. All dried. Try it. It is that minestrone flavor that is amazing. I love your recipes and make several of them on a regular basis. Ty!!! 🙋💕

There’s nothing quite like a hearty minestrone soup in colder weather. I also like kidney beans, but cannelloni would be nice too. I like your tips for chopping veggies.
Made this and it was spot on. Added some cut up green beans because I love them. Love the idea of keeping the pasta separate. Made a big batch and game some to the kids to take home.

It looks so Delicious!!! 😋 I always wanted to make my own healthy version ( instead of buying a can) I get confused of the best brand of stock & poultry seasoning at the market. Can you tell me the Brands you use in this recipe??
Marge Teilhaber I sauté the onions, carrots, celery , garlic etc first then dump in all the other veggies with stock and manual high pressure five minutes with quick release ... add kale at end along with Parmesan if you want .... I boil my pasta separately as well since it’s optional for my household - hope try and enjoy it!
Very nice! I did ad a bit more spice. Is it sacrilege to add mushrooms to minestrone soup? I haven’t done so yet, but I think that it would go well with this recipe.
If I make this, can I freeze servings. It is just me and I love having soup all winter. Btw I bought the dried cranberries and some chopped pecans for the pumpkin muffins. I am going to try it your way . 😉
your soups are amazing, done the detox one a few times. I want to try this but what can I use instead of canned cannellini beans I'm really not fond of these, can I use chickpeas instead?
FYI: In Italian, the most common pronunciation of the letter e is "ay", as in the word "bait," and the letter "i" is most commonly pronounced like "ee," as in Pizza. So minestrone (Mi-nes-stro-ne) is pronounced "Mee - ness - strow - nay".
