That cake looks soooo good. When I think about fresh coconut, I think about my GreatGranddaddy,, he would always have fresh coconut cut up and a big peppermint stick that he would break up, that was our CHRISTmas treat from him.It was so good. PRAYERS

Looks amazing. Just thought about a Kitchen Aide accessory you might enjoy as much as I like mine. It is the splatter guard for the mixer. It fits right over the mixing bowl and has a shute for adding the dry and liquid ingredients. I was having to cover my mixer with a tea towel to prevent my powder sugar from flying. Works like a dream.
I use the same words as you did.It doesn’t offend me.I see nothing wrong with super moist.It isn’t a curse word.Ask whom ever it offends why those words are offensive.Love the cake recipe,can’t wait to make one.😋

Hi , My goodness, I have done the same thing till I Learned too always dampen the flour in the wet ingredients you already have in your bowl. The Flour is stable then and will not make your clothes white. lol, It works!! Love your channel so much. God Bless You and All Your Family.

I like it when you have the full frame of you and what you're making at the same time I think that was better like you did a couple times last week also they make splatter guards for them now too that would help you out a lot you wouldn't be wearing the flour if you had that on Leslie here is another good tip for you before you ice in your cakes stick it in the refrigerator for five or 10 minutes and then it won't rip your cake while you are frosting it I bake cakes off and on for a couple years and that's what my teacher had told me to do it keeps it moist and without ripping your cake to shreds

Yes - thar zest just has so much oil in it that it becomes really hard to sprinkle. I usually just hold my microplane right over what I'm putting it on. As you said, putting it in the coconut/powdered sugar mixture would have been great but maybe adding a teaspoon of powdered sugar to the zest might have worked and made it easier to sprinkle? I'm always forgetting to do a step and having to figure out how to (nicely) recover - ha! Life just wouldn't be that interesting if we did everything by the book. . .

This looks like a great cake. My husband loves coconut. But we don't have frozen coconut up here in Calgary Alberta Canada. I just got some bakers shredded coconut on line from Amazon as we no longer get that here anymore. Can I use it in this cake in place of the frozen one? Thanks so much for your help. I really love your videos. I have 6 grandchildren and I know how your attention goes off the task, you are doing when they are around. It also happened when my 4 children were small. My husband is not a fan of coconut. On the other hand, he loves lemon cake. I may try your recipe and only use lemon flavoring with a splash of vanilla. Then, I can make a lemon icing with some lemon zest sprinkled on top. You saying, "Bewicious!" reminds me of my son. He could not say ridiculous. It always came out, "Diriculous". May God bless...

Well tonight was the last night of our VBS, there were so many kids that attended, almost 300 each night. and 11 of those kids got saved this week, and the kids collected over 1500.00 to send to missions. It was a blast. we do penny drive during this week, they bring all coins they can each night. there teachers always helps out. it was the boys against the girls, and of course the girls won again this year. Yay.
No we have around 500, but this Church is so giving, there have been a lot of people been out because of Illness , or vacations, but our Pastor asked everyone to plan there vacations around this event , to help . we spend a lot of money for this VBS, but it's worth it if it gets the kids out off the streets. we do horse rides, we have a blown up mechanical bull ride, one of those mini barrel trains, and few other things. It's like a mini carnival. It's only four nights ,but it's always a success, they also make a good meal each night for the adults, we drive over within several towns around us to pick up kids who want to come. we are truly blessed with everything that 's involved with this event. Our church has truly grown in the last 4 years.
My sweet mom in love made a delicious coconut cake that was better eaten fresh because she made the 7-minute frosting and it always dried too much after it set a day or two. I laughed when you said "ain't nobody got time for that" because I say it too. Also, my girls do not like the words moist or tender, lol, and they are 40 & 36.
My grandma used to make what she called an "All Day Pecan Cake." It was legendary! Unfortunately, she died right after I was born and nobody in the family seems to know how she made it. All I know is that it was three layers and the cake had pecans in it and the icing was made from pecans ... and my grandma would have to pound the pecans with a meat tenderizer for hours to turn them into paste that, when mixed with sugar and other mystery ingredients was the consistency and texture of icing. I would love to try that cake. Like I said, everyone in the family talks about it ... but nobody remembers how to make it.
