I don't think he shot Gianna to save her, because in the Catholic faith she would still be damned because of her intentions, the final result doesn't matter. My thought is that he did it because the marker required that he be the one to kill her and if she died by her own hand then the marker would still be active and John would not be able to go after Santino.

The only stunts Keanu doesn't do himself are being hit by a car and being thrown down the stairs. They both are very dangerous for amateur stunt performers, amd even veterans. Hence why he lets the pros do it.
