My Spicy Gazpacho Recipe!

This is my favorite summer soup! The secret is Spicy Hot V8 juice :)
Ingredients:
4 to 6 tomatoes
1 cucumber (de-seeded)
1 red onion
1 green pepper
2 cloves garlic
1 64 oz Spicy Hot V8 Juice
Drizzle of Olive Oil
Drizzle of Red Wine Vinegar
Directions:
Roughly chop the vegetables. Place chopped vegetables in a food processor (you may need to do this in 2 batches).
In a large bowl mix together the V8 juice and vegetables (the veggies should now be more minced size) and drizzle olive oil and red wine vinegar on top. Chill in the refrigerator for at least 2 hours.
Suggested toppings - crab meat, avocado, shrimp, croutons, and sour cream.
