SPICED CHICKEN SALAD SANDWICHES
1 whole roasted chicken, shredded or chopped into bite size pieces
1 tbsp olive oil
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1/4 cup greek yoghurt
2 tbsp mayonnaise
1/2 tsp mustard
1 tsp lemon juice
1 garlic clove, minced
1 shallot, finely chopped
1/3 cup parsley leaves, chopped
1/4 cup dried cranberries, chopped
1/3 cup cashew nuts, roasted and chopped
Sandwich bread slices
Mix olive oil, cinnamon and turmeric in a bowl and cook in a microwave for about 30 seconds - 1 minute on high. Add to a mixing bowl together with greek yoghurt, mayonnaise, mustard, lemon juice, garlic, parsley. Mix well before adding chicken, cranberries and cashew nuts. Mix further and serve on toasted sandwich bread slices.
