This video has been a long time coming and I finally feel ready to share my body transformation story of essentially going from binge eating/drinking, to a 1,500 calorie-restrictive SAD diet, to an abundantly colorful 3,000+ calorie WFPB diet! To sum it up...
Changes I went through:
1) Overweight on the SAD (Standard American Diet)
2) "Skinny Fat" w/ high cholesterol on a "healthy" diet of 1,500 calories a day eating Lean Cuisine, Fiber One everything, and cold cut subs
3) Underweight on 1,500 calories a day on a whole foods plant-based diet (you can see not all calories are created equal)
4) Healthy, Happy, & Fit on 3,000+ calories a day as a vegan breastfeeding mom & plant-powered athlete

I suffered from uterine fibroids- a rather extreme case - for over 10 years and had four surgeries in that time- 2 fairly major. I used to have periods so bad that I would be severely anemic and had to get iron infusions at the hospital in order to recover enough for my next period- and then took some VERY strong hormones to force menopause until I had surgery. It was extremely an extremely difficult time and very difficult to deal with. After the last surgery, less than six months later my symptoms were starting to come back. I, by coincidence, decided to try being vegan (I follow the Starch Solution when possible), and my next period was SO MUCH BETTER that I knew there was no going back. Now when I have dairy, which I do once in a while, I get hives. Same with eggs. I've lost some weight (I still have work to do), but there is no doubt in my mind that this is a healthier way to go, and I wish more women who have issues with hormones / acne, etc would try it. I also got COMPLETELY off any hormones of any kind. My period is now regular. My hair started to improve once I got off the hormones, and now I have the great hair I had when I was younger again. It's been HUGE. I can't overstate the positive impact.

I'm 60 this year and have been WFPB for the past 10 years. My journey is similar to yours and it is awesome that you came to a WFPB lifestyle so early in your life! I wish I had know about it sooner in my life but all roads have led me to where I am and I'm totally happy about that! Life really is a journey and through it all, we've been able to raise our 4 children (mainly in Asia: China, Japan, Singapore, Hong Kong and Taiwan) to become awesome adults now and that's what's important to me. We've traveled the world, including all 7 continents, and appreciate all of the earth's beauties and love to hike, bike, ski and scuba dive. Now that we're at this stage, we can go on humanitarian missions and recently returned from 18 months in Egypt. A strong faith in God and gratitude for all we have is what makes us happy and keeps us going. Thanks for sharing your beautiful story! You are so brave!! Even though you don't know me, I enjoy following you and I just have to say, "I'm so proud of you!!" :)

@@carrierainwater3678 So many WFPB experts talk about how much it helps with menopause symptoms but honestly, I haven't completely found that to be true for me! I have found that following Menopause Taylor on RU-vid has been the best help for understanding how to handle the symptoms of menopause. Dr. Barbie Taylor is a OB/GYN who specializes in menopause and she provides a real education through her free videos. I have watched them all and highly recommend her videos!

I don’t normally comment on videos but it broke my heart when you started crying, simply because I feel that you’ve changed for the good but you’ve allowed this one moment in your whole entire life to affect you as it has. Please forgive yourself for not knowing what you wanted in life. You were so young and still are so l believe you should accept that part of your life because of it you ended up where you are now. Happy, healthy and beautiful inside and out. Ps i totally have the issues with fiber, sooo I get it, but it’s OK. I’m a work in progress. And that’s the key to everything as I see it as long as we progress to healthy and choose the right things for our body we are doing what is needed.

Gosh Erin, I have never wanted to reach out and hug someone as much as I did when I watched this video. Well done for sharing this, I have a similar story to tell from my late teens/early 20s at university (college) when I would eat cereal for breakfast and lunch, then a period of eating lots of white pasta and oils because it was quick to make and cheap. I am sure many people will identify with different parts of your journey. You have done so well and you continue to offer such an inspirational channel. Hi, thank you for sharing your experience. I am 55 years old, went vegan 28 years ago with my first baby - did the "Fit for Life" it was called by the Diamond couple. Made me loose a lot of weight and although I had two healthy babies within 22 months which I breastfed a long time as well, I was very skinny. I understand your fear of comments, Erin. After everyone around me nagging, I started eating "normally" again - what is normal after all - and gained weight. However, I seem to have a natural tendency to be at least veg if not vegan. Vegan probably because I do not have access to fresh, unspoilt produce (I live on a remote island), and the commercial stuff disgusts me. The idea of animals being tortured, the environment being completely polluted by packing and transporting for us to consume products that comes from unhappy creatures who have been treated with hormones and antibiotics is just not going down well with me. Having said this, I am struggling with my weight for 2 years now. Originally, it started off with what they call "cancer" in my stomach. I have my own opinion about the whole thing which I will not go in depth here. I went plant-based again right away, cutting out the little animal products I did (love my cheese). Lost nearly 30kg's on 1,78m (sorry I am metric) and at 51kg's, definitely underweight. However, I do feel good and know that my weight will change again. I did everything naturally and eventually and very slowly feel better. A lot of work on my thoughts as well, without this, you cannot make it. We can poison ourselves from inside and this is the advice I would like to give you, Erin: please distance yourself emotionally from your body image. Do not put too much emphasize on it. You are doing what you "should" do, fair enough. But you must do what is good for you, and by judging this, you should be free from all emotions related to your body. There are techniques for that, I am sure you will find out. If you have a hard time doing this, the problem goes further and you have to go more in-depth. The experience I made is that I am being loved even if I do not "produce" or achieve anything great, which is a wonderful feeling. However, it can be a painful process, too, but it is very rewarding in the end, freeing you from any emotional stress, and completely liberating you. Well done for what you do, thank you!

This is the best video I’ve ever seen. I have a disgusting relationship with food. I can’t seem to get it together. I’m 62 years old and still struggle. I’ve had a gastric bypass, done the 700 calorie a day diet during the seventies, was vegan for two years and lost weight, but I ate processed stuff, and now I’m off it eating everything. Meat, cheese, you name it. I know better, but I do it anyway. I’m trying to understand it but I can’t. It’s like I hate myself or something. When you cried, I started to cry too, which surprised me. Writing this comment, I am crying too. You are a lovely, caring person and I thank you for sharing this story. You are a beautiful person inside and out. Our relationship with food is a tumultuous one, for many of us, but I've learned to be grateful to have any at all, and to use it to nourish me from the inside out! @@maryegerton6848 I have a disgusting relationship with food too, total junk food addict but vegan, only just switched to my WFPB diet for about a month now and it's going good, have a cheat day on Sunday atm so I don't relapse but plan to phase it out, education is totally key! knowing little fundamentals helps a tone, its overwhelming at first but after time it starts to make sense over time, some good resources are nutritionfacts.org, mic the vegan on youtube, some plant-based doctors like Dr Greger, Dr Goldner, Dr Esselstyn, Dr Barnard, Dr Klaper to name a few are good to listen to, you'll find the rest with these bunch. Also learning about why we have these addictions has really helped me to get over the junk food, a book called The Pleasure Trap really helped me on that, Stared using cronometer.com has helped to select the correct foods to get all the good stuff in and learn about macronutrients of particular foods, eating till full with WFPB makes this easier and im healthy losing weight while feeling good at the same time and not hungry, with some education and mental will power u'll get past it, I was annoyed at myself as I was learning all this but still making the bad choices, I was my worst enemy for such a long time but I eventually got over it, like the lady says patience and persistence, u got it ✌️

This video was beautiful. I was nervous seeing you so thin, but would never comment I'm not sure why people think that's okay. I'm so proud of you it was so brave to make this video and post it. My vegan journey began after having my first daughter and realized omg that's what milk is 😲 I'd been vegetarian for 6 years. After 1.5 years of not eating a healthy vegan diet I went back to vegetarian as I wasn't feeling well at all. I got pregnant again and was passing out and feeling weak and after finally incorporating more protein into my diet, I finally feel so much better and while I'm far from whole foods plant based still, I feel 100x better. I do think protein is one of those things that gets a bad wrap from vegans, but the truth is no two people are the same and you need to eat in a way that is sustainable and makes you feel good. Anyway this video was beautiful, I'm so happy for you and your family 💗they deserve to have you happy and healthy and so do you :)

Your baby is absolutely adorable. What a blessing. You are beautiful. Keep up the good work. The results are encouraging and helpful to us all.

You look so healthy and beautiful! Thank you for making this video. I went plant-based later in life and I wish I had started at your age, I did so much damage to my body! I'm 50 and workout and eat a very similar diet. The food is so pure that I can eat approx. 2600 calories a day, give or take, and maintain the lowest weight of my adult life! I agree, a calorie is definitely not a calorie.

I just came across your video since it popped up as a recommendation. Fantastic story! I just started eating Whole Foods myself, getting away from processed and so far I feel so much better. I ate nothing but fast food for years and hated myself for it. But now, things are changing. I’m not sure if I could do the whole vegan thing but maybe my mind will change down the road. Thanks for sharing your history with food and I wish you the best on your journey.

If you hadn’t experienced the ups and downs of leaving plant base clean lifestyle, you wouldn’t have been where you currently are. You look amazing! I, my self am trying to get back in shape. Great video. I got off meat almost 2 weeks after watching what the health on Netflix. And started probiotics as well. I'm not much of a dairy person but I have not turned completely vegan yet. I had digestive issues but I can tell a big difference my stomach feels so much better. I was never over weight but gained a lot when I got pregnant. That was 12 years ago. I lost most my weight but not where I wanna to be because of my eating habits. I'm doing great so far with my food change and feel better already. I reccomend people to watch what the health and there is another documentary on Netflix as well. I forgot what it is called but a UFC fighter is doing the documentary it is great as well.

So much of this resonates with me, thank you for sharing your story and helping to educate us on the facts about plant based eating and whole foods... I have struggled the last 7 years with gaining weight, grief, menopause, life's ups and downs with some hardships.. and with the weight gain feeling uncomfortable not like myself. Floundering a bit too with it all. I am excited to have found your channel, and to learn more. You are absolutely beautiful and transparent, I am happy you found your balance and healthy lifestyle. I am back on my healthy plant-based journey. A year ago I had gained back all the weight I lost but now that I'm back on track I'm slowly losing again. The main reason being for health concerns and preventative care and not to have a "beach body"" and fit into smaller sizes (too old for that). I've had family members say ''you're getting skinny" and I want to just punch something because the tone in their voice is not complimentary but negative. I can relate a bit to what you're going through.

Oh. My. God. Erin I have never heard someone voice the same past struggle between gut issues, fiber addiction, etc. When I was at my sickest before going to residential, I used to try to describe to my therapists that, "I planned my entire day/life around making sure I pooped in the morning." It sounds absurd but I felt that my entire mood and mental wellbeing depended on whether or not I could "feel good" in my stomach, and if my digestion was funky, I felt that my entire body was messed up. I was absolutely OBSESSED with fiber. I would bring a fiber tortilla out to restaurants or wherever I was eating so that I could add it to my meal. Anyway thanks for sharing you story-- I thought I was the only one who had gone through such a weird fixation on gut issues/wellness. **EDIT: I went to the only vegan welcoming Residential Treatment Center in the US until it closed this year. Most residential treatment centers view veganism as "part of your disorder". Totally unhelpful and it can make things worse. I am so grateful I was able to heal at a center that accepted and supported my choice of eating for compassion. The chef came up with all kind of yummy alternatives, such as coconut milk ice cream and pulled "pork" jackfruit sandwiches! Going vegan halted the pain in my lumbar spine from a degenerative spinal condition.

THANK YOU for being so open and honest about your journey. Your whole family looks so healthy. as for myself i just decided to cut meat and dairy from my food intake. Its been about 2 weeks now and already i feel the difference. why dont more doctors talk about this way of eating. i was having constant chest heaviness. headaches, and some light headed panic attacks . for years i was having these symptoms, and never got a good explanation from any doctors. already since eliminating meat and dairy, my symptoms are mostly gone im still learning about clean eating and i am adding more variety all the time . i really appreciate your videos, as they seem honest and from the heart, again, Thank you soo much for sharing with us.

Your story is amazing. I also lost a serious amount of bodyweight over the last 2.5 years (22.5kg to be exact). I started in January of 2018 by eating less. In January of 2019 I started going to the gym but I didn't go regularly because it was so expensive. In January of 2020 I started running, quit it in April of 2020 because I started cycling, now I'm back at running again (running every day) and I'm cycling if the weather is good and I have time for a 2 or more hour bike ride. I don't stand on my scale anymore just because my scale doesn't tell me the bodyfat to musle ratio. I look at myself and if I feel good than this is all that matters. I'm leading towards a 100% vegan diet but I'm currently circa 80% vegan. Trying to be 100% vegan by the end of 2020. Have a nice day and stay as you are because that is perfect😊greetings from germany🇩🇪

I’ve never been overweight by much maybe 10-15 pounds at 50. I have really high cholesterol and just found out I have a fatty liver. That was found accidentally while getting a scan for something else. So I literally have fat inside. What’s the first thing they tell you to do with a fatty liver? Lose weight. The doctor looked at me and knew that was not on the table. I do need to be fit and lose 5 pounds to help things along.

Erin, I so appreciate you being open. We all have struggles (even daily) and always will. I had bulimia for 7 years back in my teens into young adulthood. I thank our God that I was able to stop with His help. I'll always be weight conscious but in a much healthier way. I love the way the vegan diet helps with mental clarity and that you can eat so much more and literally feel better. I've been on every diet, you name it...tried everything and this way of eating/lifestyle is the answer! It makes sense period. I never thought I would become vegan/raw for most part, until I started watching Dr. Morse, Dan McDonald, Kristina Fully Raw and your channel. It's the answer, it works, and it's not a diet. It's a way of super nutrition. One day at a time for all of us. None of us are perfect. You are such a genuine person...if someone can't see that, so be it. Your passion for this way of eating/optimal health is inspirational! So inspirational, I plan to take my first class online with Dr. Morse. Thank you from my heart Erin. Many blessings to you and yours... I love wearing my EAT, MOVE, REST gear and thank you for that as well!

I have gone through a very similar transformation as you. My journey has been a wild one, so similar.... going from obsessive eating patterns and disordered eating and binge drinking in uni (as well as the crazy fitness stuff) to then completely changing my outlook on food and using it as medicine. It's been an incredible journey and the power of nutrition has been so inspirational for me. Like you said, food is the portal for lifestlye overhaul! I'm now a vet and transitioning to a holistic practice where I'll be able to implement everything I have learned on my journey to people's pets :) Always great to hear other people's success and transformation stories. this helped me SO much! I may not have the same exact story as yours but I've always been on the skinnier side. Just recently I've seen my body take on weight that I've never had before, mainly in my mid section. I am in my mid 30s and in April decided I needed to do something about it not only for me but for my husband and 3 kids. I also recently in Sept 2021 lost my dad with covid pneumonia who also had Agent Orange from his service in Vietnam. Losing my dad has taken on a toll on my physical body, my mental state and emotional state. The only thing I really had intact was my spiritual state. I believe in Jesus and that my dad is in Heaven with Him! I have grieved over losing him the way he went for a very long time. With all of these factors I knew that I had to start taking care of myself even better. My husband and I have been vegans since getting married in 2008. So plant based has never been my problem. I just wasn't eating right for my body type and not incorporating raw foods. Going for the packaged vegan snacks and sugar was my go to for most of last 15 years of our marriage. Now, after my husband and I started to work out - he found your husband, Dusty which in turn he introduced me to you. You have been a huge inspiration to me. IN last 2 months I have lost 8 pounds and still counting! I too also have painful and irregular periods. So I am on my own journey to figuring out what foods my body needs to start healing. I must say, I cried when you started crying! You are such a sweet soul and you have the same personality as me. Keep up all the amazingness! You are changing so many lives! Your story is an inspiring testimony! Much Love, Erin!
