Nasi Minyak or oil rice is cooked with clarified butter and a mixture of five types of spices. Many recognized this fragrant rice from its significant shade of bright yellow. This rice is widely popular in Indonesia, Malaysia and also Singapore.
Nasi Minyak is a fragrant rice dish enjoyed with curries and other side dishes. Literally translated from Malay, nasi minyak means oil rice. It is probably named after one of the main ingredients, clarified butter which is also known as ghee. It gives off a wonderful aroma which can be detected miles away. Besides that, the amazing combination of spices such as star anise, cinnamon, cardamom and others give the dish a fantastic fragrance and flavour.
Originally from Indonesia, nasi minyak is influenced by the culture of Middle Eastern cooking. The dish was special as it was only served to the Sultan of Palembang (in Indonesia) and the royal guests. As the times passed by, the dish became more common but it is still associated with big celebrations. In neighbouring countries like Singapore and Malaysia, nasi minyak is mainly served to commemorate weddings or the Muslim's thanksgiving ceremony.

This is like Indian rice, not like a Biryiani that's a different method, kind of a pilau. One thing Tumeric is always added at the beginning in Indian cooking as it has quite a metallic taste if not cooked out.. If I was doing this I'd add it at the beginning or saffron at the end :-)

Yes, agree with James. Margarine is a NO NO. Use ghee(clarified butter) only. If you must do a combo, then use butter or cooking oil along with your ghee.

You cant add tumeric or saffron at saute stage or even earlier in the piece. The color will go through the entire dish and it will become yellow rice instead of 2 tones. SO I suggest in the last 5 mins of rice being cooked when holes are forming at the top but liquid from yhe surface has evaporated and is only in the bottom half of the rice, add your tumeric or saffron coloring. This will allow both to cook for 5 mins+ and yet you will end up with the 2 tone effect. I totally agree, tumeric needs to be cooked. :)

What is the best ratio of rice : water to cook basmati rice for you..? Yes.. you said that the evaporated milk is 1/4 from the "total water" used to cook the rice (so the milk is 1/4 and the water is 3/4, isn't it?) But how much is the "total water" compared to the basmati rice for the best result..? Thank you very much..

Yes, that is right. You can find the exact amount of water and evaporated milk in the recipe for the best result. Is the water.and evaporated milk too much i am just worried the rice may be too mushy. Is 1 cup rice using the Rice Cooker Cup (which is smaller than the normal measuring cup) or the usual measuring cup (250ml)?.

Hi Lilian, it's the usual measuring cup. You can use your normal measurement for rice and water. Just ensure this time, 1/4 will be milk as explained in the video. :)

Hello! Can I just use margarine instead of ghee and coconut milk instead of evaporated milk to make it vegan?

Ghee makes the dish really special. By using only margarine and substituting evaporated milk with coconut milk will change the dish. But of course, you can do it. You'll still get a pot of fragrant rice :D

Saffron is not an ingredient typically used in this Malay dish. The original recipe calls for turmeric. Turmeric is readily available, and inexpensive. Malays do not substitute turmeric with saffron. Thank you, Grace, for the wonderful AUTHENTIC recipe. 😇😇😇🦄🦄🦄

Same but not the same :P The Indian or Sri Lankan ghee rice may use coconut milk. Here's we used evaporated milk. A few differences, here and there. Essentially, both rice dishes celebrate the usage of ghee ;)

Kalau ikut asal usul, nasi minyak ni dari Indonesia (Palembang). Nyonya dan Peranakan adalah gabungan kultur Cina dan Melayu/India/Indonesia (Straits-born). Jadi, walaupun nasi minyak bukan resepi asal nyonya, ia tetap resepi Malaysia/Indonesia. Tak ada salahnya dimasak oleh Nyonya atau Peranakan.
