#1st step make biga:
2kg flour
10gr. yeast fresh if dry 3gr.
900ml water
#2nd step add on the biga after 24/48 hours
400ml water
40gr. salt
3 gr. dry yeast

This video is awesome. I see that the biga is 45% hydration. Then you add 45% more water. I am so pumped to make my first Neapolitan pizza and I want it to be 100% biga but I'm trying to do a lot of studying first. Very inspired by Vito's videos.

Grazie Vito! Congrats on 300k subs! I made your poolish today. It is waiting in the fridge until noon. I hope I didn’t mess the quantities as I just used 300g of flour, 300g of water, 2g of fresh yeast and 2g of honey. Will add the remaining 700g of flour, 330g of water and 28g of salt tomorrow and hopefully it will come close to your amazing standard.

Vito you should try out the frying pan then grill method for cooking a pizza at home for us people that don't have a pizza oven! I think it gives the next best results to not having a pizza oven compared to all of the others!

The best way is to invert an oventray on the 2nd to lowest rack, and whack your oven on full blast for at least 1 hour before, then slide your freshly made pizza straight into the oven tray with a pizza peel. It works great all things considered.

Hi love the Biga pizza concept. Have just mixed the flour, water and fresh yeast as per weights in part1. 1kg flour, 5g yeast and 450g of water. Then watching part2, the Biga is now double the quantity it was in part1. The water and salt quantities in part 2, are now presumably for the bigger amount of Bigga. So was the 2kg of flour, 900g of water and 10g of yeast in the description(for the Bigga) a mistake, or do i need to halve the water and salt, so it matches the bigga in part1?. Hope it makes sense.Thanks

Ok. To solve this confusion I have looked at other recepis. Usually, for 1kg of flour you need about 650 ml water, 20gr salt and 3 to 10 grams yeast, yeast is not precise. So, he amounts of the second video should be split in halve. I am doing the second step now, I will let you know how it went right here.
