You are mistaken, UNCLOS did not declare the territory for Philippines. China does has international law on her side because the SCS matter was settled at the end of the WWII and the US was there to confirm that SCS belongs to China. A lot of countries, even including the Philippines, Japan, and South Korea respects the One China Policy. So if China will attack Taiwan, the only movement in the board from Japan, SKorea, and Philippines is to evacuate their citizens out of Taiwan. If China will take it further and involve these 3 countries, then other pieces will join the board (likely UK, and Australia at the very least, some European countries, and even SEA countries since lots of its member got conflicts with China). You could also see this in Ukraine war, where supplies are provided by NATO headquarters near/around Ukraine. Yet Russia didn't include attacking Poland, Germany, etc. Since attacking them will provoke a direct military action from more nations (especially those members from NATO).
