I’ve always known this as Butter Bars. Very, very good and it’s really sweet. Can’t eat this to often. Just as a special treat occasionally.

Coconut 🥥 is delicious in the top layer!

My mom always called this "Happy Day Cake" and made it for us often as kids. I haven't thought about it in years, but I think now I'll make one this weekend. ❤

Sometimes I will use lemon flavoring in place of the vanilla; I've used lime juice. And at Thanksgiving, I've done a Pumpkin version. It is a delicious decadent dessert.

We call that Gooey Butter Cake.

Do you store the cake in the fridge or can you leave it out?
