I had some leftover rice so I made this tonight. I'm diabetic and need to balance out the carbohydrates, so I also added some chopped, cooked sausage to this receipe. It was so good! It was also so filling that I could only eat half so I'm saving the leftovers for another meal. Thank you!

A Girlfriend I had used to make this a lot when we were together. She used Chopped Mushrooms, Black Olives and Chopped Bacon Bits for toppings. Great Memories!
Thanks for sharing your recipe. If I may, share with you , my opinion. That is to put the cheese on top of tomato and spring onion. You could add in other items, similar to pizza topping. Like the simplicity of your recipe.

extremely important note : if your leftover rice was pilaf which means it already had fat in it, it turns too fatty and disgusting you might puke or have diarrhea. do this only with leftover plain rice

I accidentally ended up with my boiled rice being exactly like creamy mashed potatoes 🙄 It is already chicken seasoned. Can I make fried patties out of it the same as fried potato patties? And would they even taste good ? I can't find any recipes for rice patties.. maybe they wouldn't be good at all 🥴
This is totally a thing we do in India with leftover rice. We usually add seasoning and things like minced onion and fresh herbs but you could totally just shape your seasoned rice into patties and fry them on a pan. Look up rice tikki/rice cutlet if you'd like a recipe
