» Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity. We are a small group of passionate bakers working in our garage (thanks to cottage laws) which has been converted into a micro-bakery. Everything we bake is made by hand, from the best local ingredients, with no short cuts.

I'm a retired baker with 45 years experience. I always used 'lidded' trays when baking English Muffins. Basically the lid was the same rectangular shape as the base tray but just a little bigger so it fits over the base tray. Lids were put on before proving. Lidding the trays meant the top and bottom face of the muffins baked and coloured at the same time. No flipping needed.

Jon and Amanda! Woohoo! I felt myself become emotional when I saw customers in the bakery…what a journey! What a story! You are an inspiration. I can only try to imagine the demands of this day and I admire your dedication to family, the bakery and this channel. On Apr 22, 2020 in the description of Proof Bread's first video, Jon said "We’re in this together. Those of us who are farmers, ranchers and bakers have been on overdrive to help feed this city. Everyone is undergoing massive change. If you notice the differences, I encourage you to practice empathy to your neighbors as they adapt. It doesn’t really matter what you did a few weeks ago on the regular. Chances are, it’s different in some way now. Chances are you are learning how to adapt. Let’s be aware that all of us are in that boat, and let’s focus on coming together as a community." . . . . . A year and a half later, having watched all of the videos that have followed, including today's video, Jon, family and all of their workers at Proof Bread are still talking the talk and walking the walk. Bake your own bread. It is way better than factory bread with preservatives. Have been baking sour dough loafs on Italian bread form (2 loaf).

I love baking bread. Since I cook for just myself, I developed a one-serving loaf. That way I can eat fresh, hot bread every day without gaining weight. Your breads look lovely.

I'm on week 3 of a vegetable juice fast, and watching you all methodically, carefully, intentionally and soulfully bake bread has been soul food and good medicine for me. Regarding your english muffin dilemma, use silicone baking paper on the trays & you'll never have another stuck muffin ( or related burn! )

Brand Tongs. Cooking Utensils Kitchen Utensils Buffet Tongs, Kitchen Tongs Stainless Steel Food Tong Serving Tong,4 Pack (9 inch) these tongs will prevent you from getting too close and burning your self flippers are clumsy tongs are much better.

Need a jacket (whites), but a style fitting for the bakery. At least while running the oven so your arms are covered. And yup, I was burned a lot when I worked in kitchens. Lost the feeling in my fingers enough, I could take out pizza pans with bruschetta loaded on them, bare handed. Quickly, of course.

Congrats with the bakery. The bread and the english muffins looks very good :) But here is a small but.. As a danish baker, it is so sad to see those cakes been called "danish" :/ They have nothing to do with real danish.. All the rest of your products look really good :)

About those burns, grit your teeth and stick your arm in the oven. It will hurt like heck for a couple of minutes but it will take the sting out. It works. I started baking over 50 years ago and I've done this many times.

i did this job when i was 16.....bread should cost more....the work into bread like this is so hard...people dont know how hard it is to get up every morning to make fresh bread.

I have celiac disease a d therfore must avoid gluten. I find your videos fascinating. You are knowledgeable and articulate. I get gluten free bread at Walmart. Is there such a thing as artisianal gluten free bread. You are a very hard worker and a true pro at what you do..Mike Burke

As a crafter who burned myself many times with glue guns...keep vitamin e gel capsules and as soon as you are hurt, burst the capsule over the burn and it should be gone over night.

For burns, keep a tube of Aloe Vera in your pocket. Apply immediately and it will relief you and not even leave a mark. God bless.

When I was overseas in the Navy I remember getting bread like that it was so fresh that the crust was crusty in the center was warm and toasty and delicious

Ausome opening great job. I saw your hands burns please always have organic virgin coconut oil once u get burn put it in the burn it will cool it use it daily in a week u gonna forget where it was . I bake a lot this is the best remedy with best wishes

Overbaked is a matter of choice i love dark crust. Burnt is not acceptable as this means part of the bread has turned to carbon and is uneatable.

Do you know an ancient Roman times the score pattern was a trademark of each bakery and if another baker stole their mark they could actually be sued and killed for it

When you take out the pastries, put them on bottom up the shelfs , so they cool faster, than put them under the cooling pastries, so it takes to long to cool !! Just a tip !! cool job!!
