What a great chef. I grew up as a teen cooking his recipes from two cookbooks we had.

On the cusp of the NYC trek, James had a local cooking school & show in Portland OR. My now Wife, at this time had the opportunity to be James' Sous chef for a season of these shows. (Circa Summer 82')... her take away from James was... "It's not dinner unless you've used a pound of butter"... It's great to have a few of his typed recipes to this day, in our file of recipes, with his hand written notes / edits on them... Bon Appetite

My grand aunts Summered with the Beard family at Gearhart on the Oregon coast from around the time of WW 1. My father would tell stories about James and how they would go for picnics at Little Beach, at Gearhart and have to tie dessert high up in trees so James couldn’t get at them! He was a big guy and a big eater even then! My dad also said he learned how to make daiquiris from James Beard.

Fun fact: there isn’t a picture of James Beard with a beard. 😂

That's right, James Beard really introduced American Cuisine to us Americans.
