New Orleans Style Shrimp Sausage and Chicken Gumbo #Plated #Gumbo Recipe
1 cup all-purpose flour
2 small young chickens
1 cup yellow onion
1 small onion for chicken broth
1 green bell pepper
1 cup celery chopped
3 cloves garlic
6 cups chicken broth
4 bay leaves
1 tablespoon Cajun seasoning
Kosher salt to taste
Black pepper to taste
6 ounces fresh or frozen okra sliced 1/2 inch thick
3/4 cup vegetable oil
2 pounds andouille sausage sliced 1/2 inch thick
1 1/2 raw shrimp peeled and deveined
8 scallions sliced
1 tsp thyme
1 tsp cayenne pepper
1/2 tsp garlic powder
2 tsp gumbo filet
1 tsp paprika
1 ounce dried shrimp (optional)
Directions
Add chickens to stock pot and cover with water, season with 1 small onion, salt, and 3 cloves of garlic.
Bring to a boil and then lower the fire to low. Simmer for 2 hours.
Set aside to cool....once cooled debone the chickens and keep the broth and the meat only.
To make the rue:
Preheat the Dutch oven or a heavy pot and add 3/4 cup of oil then add 1 cup of flour gradually and stir continuously (with a wooden spoon you must continue to stir from start to finish) the heat should be on med-low and add in flour until the rue is a dark chocolate color and a thick consistently.
Add pre-cut bell peppers, onions and celery to the rue and stir until the onions are translucent. Gradually Add 6 cups of your chicken broth to the mix.
Add the seasonings
Sauté sausages, chicken and okra and dried shrimp
Add everything to the pot and give it a good stir.
Let the pot come to a slow rumble and cover for about 30 minutes
After 30 minutes add the shrimp
Add 1 tsp gumbo filet to pot.
Turn on low and simmer for at least one hour.

Looks great! I made some gumbo for the first time ever about a year ago. Pandemic project. You know. Based on a recipe I found online, it was real good. Similar to what you do here, but I really like your approach and process. Bravo! Will definitely refer back to you next time.

My Mom (RIP) was a Creole Chef from "Nawlins." The way you cooked your gumbo was almost to the letter the way she (and I) cooked hers. The only difference is that she added seafood stock to the chicken broth. I also add crawfish tails when I'm showing off my culinary skills for family and friends in Baton Rouge. Thank you for keeping your gumbo authentic. I've seen people put ham, turkey necks and other (IMO) non-traditional meats in their creations and call it gumbo. The tradition and culture of gumbo is important to me and you uphold both to the letter. I am now a subscriber.

well wait a minute girl, did you not trip when ya see him drop the freeze dried Koren shrimps in there lol !!! Question when you make the seafood gumbo broth do you boil shrimp/crawfish/crab shells etc. or what you do to make the broth other than chicken broth for the seafood gumbo?

Fry the okra in small amount olive out and stir and stir and stir. You’ll fry the slime out then add crushed or diced tomatoes. No slime. Also don’t need to make a roux. Don’t need file. Okra, yellow onion, celery, bell peppers, green onions, and garlic. Just a different way to do it.

Another lifetime ago, I found myself stuck in New Orleans. Had to earn money to get back home. Got a job in a mom and pop eatery. I went to cooking school and thought I knew enough, but I was humbly wrong. I ended up staying for 2 yrs and I loved every bit of the food and culture. I'll eat me some gumbo.

For those that aren't big on boiled okra...a New Orleans trick my Grandmother taught me is to stir in fried okra right before you serve the gumbo.

I personally love New Orleans style gumbo! But Louisiana is strange when it comes to Gumbo! Every 15 miles down the road is different! I cook this where I live? I’d get shot! 😂😂😂😂

Roux is much easier to make in an oven instead of a stove top. I like crab in my gumbo. I also like it to sit overnight after cooking to let all the flavors mingle. "I Will Work For Gumbo!"

This looks like my late stepfather's gumbo that he used to serve at our family's restaurant when I was a kid, except he also put crab claws in his. I sometimes helped with pulling the meat off the chicken, but I was too young to remember the recipe. Thanks for sharing this. I don't like okra any other way, because of the texture, but it tastes great in gumbo for some reason.

You make it look so easy. Growing up, gumbo was a 4 person, half day ordeal!!! But well worth it….. the rue stirring, the shelling, deveining, “go buy more file”, deboning, slice, measuring, chop, pour, sprinkle, stir, etc!!!! But again, well worth it. Great video! But now my stomach is grumbling, mad at you !! 😡

Cajun gumbo doesn't mix seafood with chicken and sausage. They usually have chicken and sausage gumbo and or a seafood gumbo.

If you make this, if you don’t already know, make sure that your chicken stock is WARM - not cold! It’ll cause your roux to separate and clump. A lot of people say it ruins it and to start over but the first time I made it, i didn’t know and it happened to me but I just turned the heat up to medium high to heat up everything and I used my whisk between both hands and “hand blended” it to break apart the roux until it was smooth and blended and it still turned out good! So if you want to avoid doing that, make sure your stock is WARM ♥️

I'm from Texas and that's how I cook mine too. Instead of the dried shrimp I put in seafood stock but its basically the same thing and I add tomatoes. Not many ppl know the okra secret either so that was awesome to see. Great looking gumbo

You were on to something until you used those packaged shrimp. I’m from New Orleans and we NEVER EVER EVERRRRRR USED those type of shrimp. Must be fresh or at least frozen ( if you can’t find fresh ones). Overall good video!

Hey Bob thank you for your comment, we try to stay with authentic way of making recipes. As for the oil, go with canola or vegetable.

My gumbo went sideways. Roux base butter n bacon grease. Whos idea? Anyway i dont know what specific seasoning is responsible for gumbo taste. I call my dish yumbo and its great. My garlic sausage n lump crab were excellent. Ill try again🧑🏾‍🍳

Some other things to consider: Jalapenos, serranos and habaneros: Add flavorful heat if you like spiciness. Beer (ideally a dark lager): Adds a unique flavor. Pour about a cup after stirring your veggies in the roux. Mushrooms: Sautee these on the side and then add. Like okra, mushrooms are prone to producing slime.

Yes sir now that's a gumbo I like ,nice and juicy with okra , and you can use invitations lobster in it , like I used , serve over white rice , freeze the left over for another day , most time it taste much better after you freeze it , a great meal for dinner on a cold night , great video , you explained it well, great job.

Nope….. Sorry, but he lost me at the dried non gulf coast shrimp. Just like you can’t use the frozen crawfish from china. Just different; different flavor profile from the water. That’s what makes gulf coast crawfish and shrimp the best, and what makes New York pizza and bagels the best. The difference in the water.

😅😅😅 Yes This Looks Delicious And Authentic.. It Suppose To Be A Hearty Meal But The Watered Down Version Was Killing Me.. I've Been To New Orleans 2x And Sad To Say I Did Not Enjoy The Food The 2nd Time Around.. I Made Some Myself For The 1st Time And Did Very Well! 😋😋

Definitely a thick consistency ! To me, Gumbo isn't Gumbo if it's thin and too soupy...I like to add rice or pour it over rice...Boy am I hungry now ! 😁

Roast chicken bones for a stock is a good idea save your bones and skim off the scum to improve stock quality then add the muslin strained stock to your dark roux on low flame

You don't know how to or what you are cooking, people like you can't cook, so you try to teach, if you add celery it's not Cajun gumbo you are cooking Creole that's what the difference between Cajun, sausage Cajun we don't buy store packing house sausage, they have lungs in them, we will make our own,, okra gumbo is that with a few other things but you put too many things in it.. it looks like slop, and you add your green onion and parsley at the very end you do not want to over cook them 3 to 4 minutes is fine otherwise you will not taste them

I am a Alabanian in Ireland. I dont have Gumbo file. I won't be able to get it here. I do have loads of american seasonings including creole seasoning. Can someone tell me if theres anything I can use or make in place of gumbo file?

I do have one quick hack I've learned, for your roux you can actually do it in the microwave and it's the same consistency. 1 cup of flour to 3/4 cup of oil and heat for 10 min. After 5 min mark start watching it and stirring it every minute so it doesn't burn. And depending on microwave it may not even take the full 10 min.
