Ingredients:
✦ Sponge Cake
2 eggs ~100g
50g sugar
7g honey
2g vanilla extract
17g unsalted butter
27g milk
55g cake flour
7g cocoa powder
✦ Chocolate whipped cream
210g heavy cream
30g mascarpone cheese
9g cocoa powder
20g sugar
✦ Strawberries 🍓
Step by step:
✦ Sponge Cake
1. Mix egg, sugar, vanilla extract and honey into a mixing bowl and stir well
2. Put mixing bowl over a hot water bath to help beating egg mixer
3. Whisk the egg mixer until 102F or 39C
4. Melt butter and milk in hot water bath
5. Beat the egg mixer to soft peaks
6. Sift in cake flour and cocoa powder and combine well
7. Prepare a pan (6 inch diameter, 3 inch height) and pour in the mixer
8. Quickly drop the pan to eliminate extra large bubbles
9. Bake at preheated oven 340F or 170C for 25 minutes
10. Remove the cake from pan and cut it into three layers

1. Prepare 15~20 strawberries
2. Cut them into smaller pieces
✦ Chocolate whipped cream
1. Add heavy cream, sugar, mascarpone cheese and cocoa powder and start beating
2. Beat until soft peaks
