I do this without bourbon sometimes, and make a simple syrup with lemon juice. After poaching the peaches, I then use the leftover syrup to make a peach flavored lemonade.
Peaches are so much better when they have ripened fully. I am from The South and it makes such a huge difference. Allow the flesh to deepen because this is where the best flavors and nectar springs forward delivering you an even better mint julep! So Yummy especially on a hot Summer's day.
