I was born in Kaduna and have had some of the *BEST* Nigerian suya ever there as well in Lagos. They served it to me on newspaper. Like the fish and chips in london. 😋😋😋😋😋💯

I use baking sheet after adding the soya spices I add oil so that the spices will stick on the meat

Yes but it will be dry, also some of the suya spice will be lost in the hot oil.

Question...you speak of hard chicken and soft chicken. When i buy chicken here in canada we do not inquire whether the chicken is male or female because mostly its pre packaged. But when you go to your butcher in Spain...do you inquire whether the chicken is male or female and which is your preferred type of chicken to cook with. I love you Flo. Thanks for all your amazing videos 💙

Ok, male and female chicken is the simplest form I can explain it to non Spanish speakers because here in Spain when you go to the shops all you need to do is ask for gallina (hard chicken) or pollo (soft chicken). When it comes to male and female, it's beyond pollo and gallina because: Pollo (chicken) = Gallo (male chicken) and Gallina (female chicken). But in the shops you see chicken labled as either gallina or pollo, you rarely see gallo. I hope you get my point. So I guess it's safe to ask your butcher or farmer for chicken with very tough meat if you want to ensure that it is hard. My preferred one is the hard one because it is tastier and goes better with Nigerian recipes. The soft one is tasteless to me. I think I say this in all my videos where I use chicken. There are one or two recipes where I'll use the soft chicken, mostly directly-baked-in-the-oven recipes just because they bake in less time.

I beleive hard chicken is also called fowl. The meat is tougher.

Nothing is better than Jamaican jerk and Nigerian Suya, just thinking of these two foods are making me hungry,my mouth is full of water and my belly is rumbling. Damn no charcoal..... :(
