NO BAKE Ube Mousse Cheesecake (with music version)
How to Make Ube Mousse Cheesecake

INGREDIENTS:
Ube Mousse
100 g (1/2 cup) Ube Jam
60 ml (1/4 cup) Whipping Cream, cold
4 g (1 1/4 tsp) Gelatin Powder
60 ml (1/4 cup) Water, cold
1/4 tsp Ube Extract
Crust
125 g (1 cup) Graham Crackers, crushed
74 g (1/3 cup) Butter, melted
Ube Cheesecake
227 g (8 oz) Cream Cheese, room temperature
30 g (1/4 cup) Sugar
70 g (5 tbsp) Ube Jam
1/4 tsp Ube Extract
200 ml (3/4 cup + 2 tbsp) Whipping Cream, cold
6 g (2 tsp) Gelatin Powder
30 ml (2 tbsp) Milk, Cold
2 ml (1/2 tsp) Ube Extract *for the 150 g (2/3 cup)
Toppings
White Chocolate
Round Pan | 12.7 cm (5 inch)
Springform Pan | 17.78 cm (7 inch)

Ube Mousse
100 gramo (1/2 tasa) Ube Halaya
60 ml (1/4 tasa) Whipping Cream, malamig
4 gramo (1 1/4 kutsarita) Pulbos na Gulaman
60 ml (1/4 tasa) Tubig, malamig
1/4 kutsarita Katas ng Ube
Crust
125 gramo (1 tasa) Graham Crackers, durog
74 gramo (1/3 tasa) Mantikilya, tunaw
Ube Cheesecake
227 gramo (8 onsa) Cream Cheese, temperatura ng silid
30 gramo (1/4 tasa) Asukal
70 gramo (5 kutsara) Ube Halaya
1/4 kutsarita Katas ng Ube
200 ml (3/4 tasa + 2 kutsara) Whipping Cream, malamig
6 gramo (2 kutsarita) Pulbos na Gulaman
30 ml (2 kutsara) Gatas, malamig
2 ml (1/2 kutsarita) Katas na Ube *para sa 150 gramo (2/3 tasa)
Toppings
Puting Tsokolate
Bilog na Bandeha |12.7 sentimetro (5 pulgada)
*Springform Pan | 17.78 sentimetro (7 pulgada)

Hindi po. Make sure to set the cheesecake sa ref overnight yung gelatin po kasi mag ho-hold sa cheesecake para hindi matunaw. From experience hindi natutunaw yung mga ganyang cheesecakes pero pag super init satin lumalambot sya so binabalik ko na sya sa ref pag napansin ko nang ganun po 😊

May I know what brand of whipping cream did you use? Medyo nalilito kasi ako sa whipping cream and heavy cream 😅

Hi Sarah! I used Elle whipping cream in this one but I also use Anchor and Emborg brands if Elle isn't available. They're pretty much the same tho. Difference po ng heavy cream and whipping cream is the fat content. Higher po fat content ng heavy cream and whipping creams naman po kadalasan sweetened na sya. Pwede naman po gamitin heavy cream din kaso lang po mas accessible ung whipping cream po sakin 😅 Di po pwede all purpose cream kasi po kailangan ng higher fat content para po ma-achieve ung airy and soft texture lalo na po para dun sa mousse.
