Raw Cashews are about $12/lb, so that's about $6 of cashews. Pitted Dates are about $8/lb, that $4 worth of Dates. 9oz of Nestle Dairy Free Chocolate Chips $5.99 (~$10.67/lb) so $2 worth of Chocolate Chips per 1/2 cup. So the 1st recipes costs at least $0.75 per bar, for 16 bars, $12 total. 2nd recipe, $6.59/26oz, $4/lb) $2.03 / half cup. Peanut Butter 1/4 cup maple syrup is ~$2.50 (32oz @ $20, $10/lb or $0.63/oz), ($4.49/64oz [$8.98/gal], $0.07/oz) $0.28 / 1/4 cup soy milk, ($5.99/8oz, $11.98/lb) ~@1.50 for 2 oz of cocoa powder. Unreal peanut Gems typically cost $3.75/1.5oz (noting these packages were discounted to $0.99) and comes to about $3.44/12, So at least $0.80/nest, $9.60 total. 3rd, (another) $4 worth of Dates, $1 of peanut butter, $4 of Chocolate Chips; so at least $0.75 per Buck-eye or $12 total. Great Ideas, but a bit too expensive for most Americans to afford to make.

Any recipe can be altered. I use date paste that I get in the Indian section of my health food store so it is very inexpensive you could also add raw rolled oats to help it stretch a little bit. And everybody is different on their sweetness levels so you don't have to add as much sweetness as she does. Also I buy cashew pieces on Amazon and it's only $7 a pound

Toll house does have a dairy free chocolate chip. I do not know if the ones she showed are dairy free. There are other brands that are plant based.?

For the recipes with dates, is there a substitution if you don’t have them on hand? Or would you have to add too much of a sweetener like maple syrup for it to work?

I have never tried it with maple syrup but you could definitely try. It may change the texture a bit.
