Try this carnivore diet safe, no crust keto cheesecake recipe made with only eggs, heavy cream, cream cheese, and Manchego (or aged sheep milk) cheese!

It can be optionally sweetened with erythritol or glycine for a more ketovore treat or left unsweetened. For a more "normal" cheesecake, use around 75g of sugar.

I got inspired from this recipe and now I do it twice a week. It's amazing. I do variations also, trying with different type of cheese for example. One day I will try it with feta, still using the heavy cream and the rest. Last weekend I did half a dose cake, so I was supposed to use 2 eggs but I have added 3 more yolks so in total 2 whites and 5 yolks for a half dose version. It was a sweet spot. I will keep experimenting and let you know if that works by using feta.

I've been experimenting too and hope to put up a new recipe too. I've found it's really good with only cream cheese and more eggs too! The eggs really give it a great flavor- somewhat custard-y. ;) I've also tried adding milder block cheeses. I'd love to hear how your experiments turn out!

Yes, the sheep milk cheese gives a distinctive flavor, but I'm sure a cows milk cheese would be good too!

Okay, so I made this. I imagine it came out as it’s supposed to. I will say that I don’t care for it. I believe it would be good if I made it without the m. cheese it calls for. It was essentially too cheesy and wasn’t at all like you’d expect cheesecake to be. I’ll still eat it so it doesn’t go to waste, but I love the taste of cream cheese and the m. cheese overpowers it a lot. Overall, if you want it to taste more like cheddar cheese/eggs then this is for you. It’s just not my cup of tea. I’m going to try some cinnamon or something to tone it down. I just don’t know what yet.

I LOVE manchego cheese cheesecakes. (I live in Spain, so it's a common addition here to cheesecakes. I don't think it tastes anything like cheddar. A good manchego cheese definitely has a distinctive flavor. if you don't like aged cheeses, though, then yes, feel free to make it with a milder cheese instead.) Personally, the manchego cheese is what gives it a great flavor for both my husband and I, but obviously everyone has different tastes.

While it would probably work, it may be softer because the consistency of the sheep milk cheese is harder. It would also change the flavor since the sheep milk cheese gives a distinctive (delicious) flavor. I suspect it will work fine, but if you find it's too soft, consider using a hard, white, aged cheese- whatever you can find in your area.

@@Thethingswellmakeyes you can just take out the m. cheese. That’s the way that cheesecake is supposed to be made and I didn’t quite care for the m. cheese because it doesn’t taste like cheesecake anymore but I figure some people will like it.

@@annad5130 This recipe was a modified version of a Manchego cheesecake that is insanely popular here in Spain from a star chef. He obviously doesn't give out his recipe, so many have come up with their takes on it, most with a ton of sugar. This was my attempt at it, and I find it very similar to the original. Cheesecake comes in many varieties worldwide. While cream cheese is probably universally used, most countries also include other types of cheese in their cheesecakes. I only mention this because you stated that "that's the way that cheesecake is supposed to be made! and that "it doesn't taste like cheesecake anymore" Everyone has different tastes, and I like milder cheesecakes too, but that doesn't mean it's the only kind of cheesecake. Cheesecake recipes are very forgiving. You can use different types of cheese and still get a great result as long as you don't overcook or undercook it.
