Today, I will be sharing my family’s favorite bread, Tapioca cheese bread recipe. (Pão de Queijo)
Since my brazilian husband loves cheese bread, I’ve tried so many cheese bread recipes.
And this recipe is the one that we decided to use for the lifetime. Lifetime cheese bread recipe!
The ingredients for this recipe is really simple and easy to make.
But in Brazil, there are 2 types of tapioca starch called [ Polvilho Doce / Polvilho Azedo ]
If you really want to make authentic brazilian cheese bread, I really recommend you to use polvilho azedo.
But if it’s hard to find, you can use usual tapioca starch as well.
Also many brazilian make this bread mixing half polvilho doce with half polvilho azedo, but to make more soft texture I only use polvilho azedo for this recipe.

Cheese Ball - Pão de queijo
18 balls
Tapioca starch (Polvilho azedo) 220g (1 1/4 cup)
Water 50g (3 Tbsp and 1 tsp)
Cooking oil 50ml (3 Tbsp and 2 tsp)
Milk 110ml (1/3 cup and 2 Tbsp)
Egg 1 (50-55g)
Grated cheese 120g (1 1/2 cup)
(depending on your taste / pizza cheese or gouda cheese recommended)
Salt 5g (1 tsp)
1. Put water and cooking oil in a saucepan and boil over medium heat. When it starts to boil, Add in a bowl of tapioca starch and mix.
2. Add in milk and make it into chunk, then transfer it to the workbench and knead for 1 minutes until smooth.
3. Transfer the dough back to the bowl and mix with the egg by hand.
4. Finally, mix the cheese and salt. Cover the top, and harden in the freezer for 1 hour.
5. Divide the cold dough into regular size and place it on the tray (about 1 tablespoon per each). Put a little cooking oil on your hands and arrange the dough into round shapes.
6. Bake in an oven preheated to 200℃ (392℉) for 15 minutes. (Take it out of the oven before the top turns dark brown.)
