You have very beautiful kitchen utensils. Watching your methodical demonstrations is the equivalent to watching a blank canvas slowly cime to life from the very basics of materials, flour, yeast, salt and water to a work into a beautiful work of art which is the ultimate masterpiece. You teach dilligence, patience and determination that inevitably can be carried over into various aspects of everyday life. Its not all about baking bread but the skill needed for a job well done, andvthis youbhave accomplished.

I am in the process of making ciabatta using your recipe from four years ago. Tomorrow, I will use this recipe just to taste the difference. This recipe with poolish results in moist and fluffier ciabatta. I love it!
