I did 100g Semolina, 100g AP, 100g Water + 1/2 tsp of salt. Your tip about moving the excess flour away just to knead the dough and see if the dough will need it was excellent. I moved mine away and did not even need all of it. I also checked for holes and stretched it out to see if it ripped a lot before continuing to knead. I believe this led to a very successful first dough. It was delicious, so thank you so much!
