Jeannette Rainbow I agree with every word you said in your comment. And I, too, have both of Kim’s books...both books are full of terrific & delicious recipes. I love her healthier pesto recipe, her pancakes, tofu recipes, on and on. Have given these books as gifts too.
Essentially, you’re just dry cooking and steaming food. You need oil to transfer heat evenly in the pan and moisturize foods when water evaporates in a sauté or stir-fry.
