Today's recipe is for a coffee jelly cake made with agar agar.
Agar jelly has a crispy texture and does not melt even in hot temperatures, making it a perfect summer dessert.
I made it by dripping coffee, but you can make it even quicker by using store-bought iced coffee☺.
▷Ingredients (15 cm):
400 ml milk (300 ml + 100 ml)
20 g sweetened condensed milk
1 teaspoon vanilla extract
30g sugar
5 g agar agar powder
100ml coffee
60g coffee beans
Hot water at 80°C (approx. 650ml)
500ml coffee (300ml + 200ml)
30 g sugar
5 g agar agar powder
▷How to make:
1. Grind coffee beans to desired size, drip and brew approximately 600 ml of hot coffee.
2. Put 300 ml milk, sweetened condensed milk, vanilla extract, sugar, and agar agar powder in a saucepan over medium heat. 3.
3. Stir the milk until it comes to a boil, stirring occasionally. Once boiling, continue heating for 2 minutes. 4.
4. Add 150 g of the agar liquid from (3) to 100 ml of milk and mix to make milk agar. Add 100 ml of hot coffee to the remaining agar agar and mix to make café au lait agar. 5.
5. Pour the milk agar and café au lait agar into a wet round container. Refrigerate for 30 minutes to harden.
6. Mix 300 ml of hot coffee, sugar, and agar agar in a saucepan and heat until the mixture comes to a boil, stirring constantly.
7. When the coffee mixture comes to a boil, continue heating for 2 minutes. Remove the pot from the heat, add 200 ml of hot coffee and stir.
8. Cool the bottom of the container with ice water, pour a little of the coffee agar from step (7), and let it cool and harden. Pour the solidified milk agar and café au lait agar into the container, pour in the coffee agar, cover with plastic wrap, and refrigerate for 1 to 2 hours.
