They do look the same. So that’s impressive. Not to mention super delicious. But I’m sure the Italians (or other cheffy folks like me) will now comment to say that neither is a risotto, because the texture is incorrect. A risotto should “swim/flow on the plate”. Namely, there needs to be more of the liquid/cream (created from the emulsification of the starch, stock, butter and parm)
@dorothyyoung8231
@dorothyyoung8231 2 месяца назад
That effect wouldn’t be possible with a rice cooker. Its fuzzy logic is based upon the temperature inside the cooker rising above 212F/100C one the liquid is absorbed. So if you were to add more liquid in the hope of ending up with more “flow” the cooker would simply keep cooking until the rice turns to mush.

I use a pressure cooker for my risotto and it does swim on the plate. I also used to cook it in the microwave and got the same result. I love risotto but hate the standing about waiting. Also, in a rice cooker, whilst you wait for the cooker to wilt the last minute ingredients, you could add a little bit more stock and get the swim as it would mix with the starch already present.

@@tv-21 its universally agreed upon that Italians are the most annoying and pretentious when it comes to their food. we'll do whatever the hell we want and add the miso to our risotto in a rice cooker while y'all crying and stirring your precious grains the next two hours lmao
@deeya
@deeya Месяц назад
@@tv-21 Those kinda Italians insist on strict adherence to authencity, whilst ignoring the fact that their cuisine came from elsewhere. Tomatoes were first cultivated in S. America, but they' act like they thought up crushing it into a sauce. Hence authenticity doesn't mean shit. Cuisine evolves. Hell, even in Italy itself there's probably 100 different ways to cook anything. They're called family recipes.

Any tips/instructions for making congee in a rice cooker? Tried to years ago, but the short-grain rice I used never fully broke down. Do you need to use a food processor to fully turn it into a porridge/soup? 💗

Marion ! Your “rice cooker hacks” on many tried-and-true dishes really work ! Thank you. I wish so many college young adults watch your videos, learn your techniques, follow your instructions, then cook for themselves healthily, enjoyably and economically - as so many of them nowadays have rice cookers in their dormitories and student apartments, or their moms actually pack rice cookers for them to schools, even white kids.

I was told not to let risotto cook longer than 12 mins, to the point I put the timer on for 12 mins. I do like the rice to hold the Al dente texture though.

Most disappointing episode ever. How can you even call either of those risotto? Do you know what makes risotto risotto? Why do you use those specific rice varieties? Because they break down and release a starchy powder into the stock AS YOU STIR IT. That doesn't happen without stirring. That is what makes risotto creamy. Both of your versions, yes, even the stove top one, are NOT creamy, they both looked dry as evidence of not enough stock and not enough or completely absent stirring. Best thing is you didn't add cream I suppose. But then you didn't add white wine either. Can't say I would want to eat either of those two 'cooked rice' dishes as I would call them. Sorry. Not for me.

No, no, no. There is only one way, it takes 15 min in all start to finish, and takes no rice cooker, pressure cooker or oven. Don’t like it? Don’t make it. Or, don’t call it risotto. So sorry Marion, love you dear but not this. I am sure it is delicious but you are overcomplicating the pan recipe, and…. Well no.
