I raced Nortons for many years and never had any problems with exhaust nuts.On most of my race motors, I safety wired the nuts, but never saw any indication that the wiring was stretched or tight. Don't know why I safety wired them, but we used to wire everything. Never paid any attention to exhaust nut materials, just used what I had. I did always clean the threads, use anti-seize, and torqued them up well. Don't race any more, but think stainless nuts, well machined, would look good, maybe safety wire to look cool too.
