Steven stated years ago that "plating" (or lack of plating) onto the cutting board was a production decision. He started his channel out of his parents' home and didn't want the hassle of having to have all different colors and types of plates that maybe needed for different types and different colors of food, etc. It keeps everything uniform for him and the viewers.

@@Sharon46T It's a beautiful thing. You would love it. You spread pizza dough out into a rectangle, spread the ingredients out on the rectangle...............and roll it up like a big jelly roll. Bake at 375F for 25 minutes. Comes out perfect in a home oven, it doesn't need high temps. I've tried every possible stromboli combo you can imagine. Go with the sausage and peppers. Trust me. Steven did a video a couple weeks ago titled something like "Christmas Sausage and Peppers stromboli". Steven is using mozzarella in his, but walk on the wild side and try it with slices of provolone sometime. Sprinkle in some oregano too. :)

Just want to say thank you to vincezo and James makinson. As a chef I feel out of love with cooking a few years ago but after watching there videos it's made me fall in love with cooking again. There passion is just infectious

Steven is by miles the best person in the US to teach americans anything about italian food. His Carbonara videos are absolutely golden, one could almost think, you are twins :) He adores the italian cuisine so much. Thanks for the video, Vincenzo

I use more parm reggiano than pecorino romano because pecorino is literally 4x the cost of parm around here and that's if you can even find it.

Steven is such a chill dude. I've made so many of his recipes and all of them have been delicious and easy to follow. I haven't made his Cacio E Pepe, but if it's half as good as yours was it'll be another recipe of his added to my list!

You two are the reason I’m cooking how I do now. Found both of you during Covid and haven’t looked back since. He’s a fellow NYer and provided a nice twist on a lot of dishes but for the Roman staples he doesn’t stray from the original.

I enjoy Stevens videos very much. Either as a beginner or to improve already existing skills, these videos are of great value. In addition I like his introduction to the products used for cooking. They are short and also very valuable. Over the last couple of years I have used about 20-30 of his videos and it really helped me to improve my italian cooking skills a lot.

Another small detail that makes a big difference with this dish, since it will tighten up fairly fast out of the pan, is to serve Cacio E Pepe on warm plates!

I've been watching "Not Another" for a couple of years now... I don't know his culinary education but he's very skilled, cares about authenticity, and does a lot of research to make things right... Whoever produces his videos is a genius...It might be him... So engaging and relaxed.... It gives you the feeling that "you can do this"...... Love your content, take care and Happy New Year.

12:09 Questo ragazzo una volta non aveva piatti, metteva la pasta sopra un tagliere. Poi ha cominciato a comprare qualche piatto e ha cambiato sistema. 😉 😀 Nemmeno io ho mai capito questo suo sistema, ma diciamo che era una sua caratteristica tutta personale. Comunque c’è da dire che lui, di origini italiane (se non sbaglio da parte del padre) si impegna anche a fare delle ricerche quando fa i suoi video sui piatti italiani e vedere anche un po’ la storia dietro il nome, dietro l’origine di un certo piatto. E si impegna anche per quanto riguarda la scelta degli ingredienti. PS: molti dei cosiddetti “cuochi stellati” che presenti tu a volte su questo canale, potrebbero imparare molto da lui !

Si, onestamente è una scelta che non comprendo, ma sono contento di sapere che adesso utilizza dei piatti 😆 In ogni caso, apprezzo tanto il suo canale perché, come hai detto tu, si vede che questo ragazzo sa di cosa parla. E non è da tutti 🙄

OMG I burst out laughing at this!! Ohhh, you made me cry!!! 🤣🤣🤣 No matter how good it tastes, if it looks bad on the plate you have already lost! It can be soooo simple but make it look good!! I had homemade Goat Stew in a farm house in rural Greece 20 years ago and I still remember how good it was!! I love Chef Jean-Pierre, he cooks with passion, he's not pretentious and he's so fun to watch!!!

But I often get the impression that my friend Vincenzo here is more willing to show people who ruin Italian dishes, and then make it clear how good he is, than he is to show people who can make very good Italian dishes and where he too can learn something. ;)

I actually make this in a wok. Its super convenient but you have to constantly stirr so all the pasta gets touched by the water in the wok, because there is no water outside of the middle.

Yep. I also use a wok simply because it's the biggest pan that I have and it works perfectly for pasta.

Ciao, this is interesting to hear, since I’ve never used a wok for Cacio e Pepe (actually I’ve never used it for Italian recipes). So do you suggest making this recipe in a wok? Have you ever tried making it in a regular pan?

@@vincenzosplate Yeah I would recommend it. Its really good for bigger batches, but I also made small batches in my regular pan although I have much more spills around my cooking place, and since Im lazy with clearning, I use the wok. :D Somehow I can also toss the pasta better with it because of the curviture the wok has. Also a wok really nice if you dont have a large stovetop, because it doesnt have a lot of surface.

​@@vincenzosplate yeah similar to your silver giant pan at 9:36 I guess, just more curved. Wok makes it less messy, easier for tossing and easier to scale for larger servings

when the pasta dries up the sauce, you can add another laddle of the cooking water and stir. It works most of the time.

Love Steven. I watch his videos all the time. Another American Italian that’s pretty good is Sip and Feast. He’s a home cook. Very good too.

Glad you recommended "Not Another Cooking Show". Will definitely check it out, especially since it is Vincenzo approved. And, will try this simple recipe as it looked delicious. But, will do half pecorino and half Parmesano R. I am American, so have to take baby steps before I go full on sheep cheese. On second thought, probably should blame my husband for the pecorino caution, I love feta (he doesn't) so I would probably love pecorino 100% in Cacio E Pepe. Great review!
