BOLOGNESE -
4 Shallots + 1/2 an Onion
1 Large Carrot
4 Cloves of Garlic
1 Large Stick of Celery
1 Glass of Red/White/Rose Wine
500g 5% Beef Mince
4 Sun-dried Tomatoes
2 Tablespoons of Tomato Puree
1 Tin of Chopped Tomatoes
2 Beef Stock Cubes +
Add the diced onion, shallots, carrots, garlic, sundried tomatoes and celery to a pan and cook for 5 minutes. Add the wine and leave to boil down. Add meat, stock cubes, tomato purée and tinned tomatoes and cook for a few hours on low. Take 1/2 of the mixture and lightly blend but NOT to a purée! Add this back to the mixture and cook for an hour longer.
