Decorative Cream Tart recipe, also known as Numbers cake or letter cake or Alphabet Cake. This cake is super trendy on Instagram in 2018. Basically it is tart based cake with delicious mascarpone cream, decorated with fresh fruits, meringue, flowers and more. This cake is perfect for birthday or any special occasion.

RECIPE:
Ingredients:
For the crust:
300g (2.5 cups - 1 tbsp) flour
75g (⅝ cup) ground almond
75g (2/3 cup) powdered sugar
200g (7.05 oz) cold butter
1 egg
1/2 teaspoon vanilla extract
Pinch salt
For the cream:
400g (14.1 oz) mascarpone or cream cheese
400ml (1⅔ cups) heavy cream
150g (1⅓ cups) powdered sugar
1 teaspoon vanilla
For decoration:
Macaroons, strawberries, raspberries, meringue Kisses, chocolates, flowers and more.
Directions:
1. In a food processor, process cold cubed butter, flour, ground almond, powdered sugar and pinch salt. Process until crumbs are formed. Add egg and vanilla extract, process until dough is formed.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 1 hour.
3. Preheat oven to 180C/375F
4. Roll out the dough on a parchment paper. Refrigerate for 30 minutes and cut your number/letter/shape. From the leftovers roll again the dough, refrigerate for 30 minutes and cut another number/letter/shape. For one cake you will need two layers of biscuit.
5. Bake for 10-13 minutes or until slightly golden in the edges. Let cool completely.
6. Make the cream: in a large bowl beat mascarpone and powdered sugar. Beat until smooth. Add vanilla extract and heavy cream and beat to stiff peaks. Transfer to a piping bag.
7. Pipe the mascarpone cream over the first biscuit, then gently place the second biscuit on top. Pipe the remaining cream and decorate as you like.

@@aymsmi Hi Aymie, I think it was 12" when I made the first one and the most recent letter cakes, I used the base of an old cake box to draw and cut out my template, its a perfect square then. 10" may be easier, it depends on the letter. I made an N the first time, much easier than the A that I made last time!

For everyone asking if it's a cookie or a cake- it's exactly that a cookie-cake. The bread part is cookie but stacked like a cake. Beautiful-not very practical but it's still nice.

I want to prepare this cake for evening. And can I prepare the biscuits the day before and it's frosting on the day of celebration ? And can I decorate it and store it in fridge for how long once it is decorated in the morning? Also is there any specific timing for ideal taste refrigeration required? Please advice. This is first time making and also will be tasting.

I made this for my mother in laws 80th bday. Got lots of compliments on it. Not to sweet either. I did make it the night before thinking the cookie will get softer but that was not the case. The cookie remained crisp 24hrs later. Will make it again for sure

@@cheryl7725 I just printed the numbers in word using a txt box so I can manipulate it to fit a whole sheet of paper then cut that out and traced it on posterboard paper. Worked like a charm and it was free 😊

You can order stencils online from Amazon but it’s way easier to just get a poster and trace numbers and cut it out that way you know how big or small you’d want it

wonderful. Thank you. 2 questions and 1 suggestion (I tried already and liked the result). 1: when you roll the dough, how many millimeters should be the thickness? 2: I used colored meringues as part of decoration. they were placed 3 hours before serving. Cutting the cake, the meringues were extremely soft, almost melting (not for the temperature, we are freezing in Scotland) but because of the moisture of the cream, and discolored on the cake. Did happened to you too? any suggestion? and about the suggestion: I did the tart as base and a sponge as second layer. The sponge kept together the cake while cutting (so no slice crumbling apart) and love the two different consistencies! just my 50cents thought :-)

P.S. I dip the base of my meringgues and sugar decorations in a bit of chocolate before adding it to any whipped topping ( it creates a mini barrier - similar to lining tartes with a bit of chocolate before adding cream )

I make and decorate cookies for a living and they're not easy to cut once they're baked.... these come out of the oven looking harder than my standard sugar cookies do

Lwaxana Teunissen i have made a few now and the trick is with the dough. If you use a standard cookie dough it is difficult to cut but if you use a good pate sable dough which is very short and buttery it can be cut if carefully into slices.
