I've been watching bon appétit videos for a while now and to see for the first time a representation of my heritage alongside other restaurants in such a cutthroat industry feels very much inspiring for a Filipino like me in her early 20s, holding a dream and a great passion for cooking.. kudos to Tadhana and Chef Frances!

When he started to explain the details of the fish and how it’s respected as a quality ingredient as compared to how it’s done in America. I wasn’t even surprised. You can’t beat Japan and the prestige of how things are done. Not just with food and ingredients.

Omg I find this very motivating! I’m currently in school and we have food service courses where creativity is a must and this definitely screams innovation. This is so insightful and inspiring and I'll definitely be considering this route because of this! I pray Tadhana gets that Michelin star!!

I find it interesting how she mentions she only uses 50% of the fish since the Filipino cuisine is usually very resourceful in utilizing every part of the animal, especially in an expensive fish.
