This episode, Denny and James continue their series on Japanese green tea while brewing some some lovely Sencha (O-Cha's Chiran) fresh off the boat from Japan. This is a part of O-Cha's 2013 Shincha offerings. Also recommended from O-Cha: Yutaka Midori.

Thanks alhawal. This is a very nice tea, and O-Cha is a very nice vendor. Yutaka Midori is another one worth checking out. I think O-Cha is also currently having a Shincha pre-sale with a discount on their facebook page ;). Cheers, -James

Thanks Adam and Cody, appreciate the support! Barbara, green tea (especially Japanese) can be very delicate. A few degrees can make quite a difference.

Tea DB 1. I brew my tea in a French Press? Is that okay? 2. My Sencha is from Upton Tea imports and is a golden yellow color instead of a lime green. What does that mean?

Bert Simmons Hi Bert, Thanks for the comment. Sure! Don't see any real issue with using a french press. I'm no sencha expert, but tea isn't always necessarily the same color. Alot of it depends on brewing parameters. Cheers! -James

Hi +Emma Loiuse Manning, Thanks for the comment. Indeed, that could be the seaweed taste. It's a taste that is definitely not for everyone. That being said, there's a pretty significant variation in the overall profile between alot of these senchas. They can also come out notoriously different depending on how you brew it. I'd recommend picking up a few different types of loose leaf sencha and experimenting! Oftentimes, it's simply a case of getting the right stuff for you. Cheers! -James

Hi, I recently bought some Japanese Seneca loose tea leaves as I have been drinking and enjoying some teabags of green tea for a few weeks now. The tea from my teabags had an earthy taste which I find rather enjoyable and I assumed the tea from the leaves would be the same or similar, however when I made a cup of tea with them (using an infuser instead of a pot) it tasted nice and fresh but I kept getting a taste like seaweed. I just wanted to ask if this is the grassy taste you were talking about and what would be a good way of easing my taste buds around to this new flavour as it is very strange. Many thanks, Emma

Hello. I'm new to green teas and developed an interests after trying South Korean green tea candy called Mammos Friend. I love the flavor of the candy so I purchased another South Korean product by Sempio which is a brown rice green tea. It's not a bad tea, but it's not what I'm after and certainly doesn't taste great like the flavor of the candy. It kind of smells and taste like popcorn. The tea didn't have a green appearance, so much as it had more of a brownish yellow appearance. I would love more of a green to darker green appearance and something that taste like the candy I tried. Perhaps I should give Sencha and Matcha a try.

very cool video guys! really enjoyed it one thing thought, I was told that for health reasons the following steeping should have higher temp but shorter steeping times. keep it up!!

Hi Hugues, thanks for the comment! On the topic of water temperature I've heard different things on that manner but never anything particularly concrete or convincing one way or the other. Regardless, teas like this should be steeped at lower temperatures for the sake of taste. If you are worried about the water not being hot enough, heat it up to a boil and let it cool off. IMHO The best ratio for sencha is 1g for 30 ml and for Gyokuro 2-2.5g for 30ml. Use lower temperature(60-65°C) and longer steeping time(1-2 min.) for Asamushi Sencha and higher temperature(75-80°C) and shorter steeping time(30-50s.) for Fukamushi Sencha. Gyokuro brews best at around 2 minutes and 40-60°C temperature.

Can you publish a guide to water temperatures and steeping times? It seems like every tea is different.

+Riley Thomas Good suggestion. I'm afraid we've moved a bit away from these green teas where the temp and steep times are very specific. I have written a Japanese green tea report with some steep time information: teadb.org/japanese-green-teas-april-2014-report/ . Cheers, -James

From what I’ve read and my own experiments I’d say the best way to brew it is first steep: 1 minute at 160°F second steep: 10-30 seconds at 176°F and third steep: 1 minute and 15 seconds at 165° to 170°F. I don’t brew Sencha for more than 3 steeps.

Hi Julie, Thanks for the comment and very good point! I've seen both styles done with green tea. To create a more consistent liquor the server will usually switch between cups (i.e. pour into the first cup halfway, then the second cup all the way, and then finish pouring the last bit of tea into the first cup). We're very used to using a Cha Hai or Gong Dao Bei (serving pitcher) because it helps to cool down the liquid for teas we brew at a higher temperature (oolong/pu'erh). Cheers! -James

Why does your teapot have a strainer? I thought sencha was traditionally brewed without one so that the leaves can open as much as possible?

Andrey Ivanoff really late to the party but it looks like what’s called an obi-ame style filter, which is a strip of stainless steel mesh that wraps around 360° of the inside of the kyusu, so it still gives the tea plenty of room to unfurl

Hi, I just bought this tea and brewed it twice. For the first time, I did according to O-CHA's instructions, i.e. one teaspoon for 220-300 ml kyusu, at 175 degrees. The tea aroma is strong but the taste is quite dull, like plain water with tea added. The second time I brewed at the temperature you recommend, 160 degrees, and I added two teaspoons. This time it was better, however still the taste isn't as strong as I thought it would be. Am I doing something wrong or is it the taste that is simply so delicate?

Go higher, 3 teaspoons, if that is not enough then brew for longer. You must experiment with the variables a bit to get it right. I almost never follow instructions from the vendor.

Great video,but I'm not familiar with american units,so it didn't help me much in terms of temperature :D. But I think we can all agree on the fact, that tea's awesome :D
