Good to know about the lazer thermometer! I was thinking of picking one up for tea brewing, but now I'll just stick to my meat thermometer!

Does anybody remember a tea review show that used to be on RU-vid with two young guys, I think they were students at Duke University. It was great, not so many episodes, but can't find any. Thumbs up on this channel though, great job guys.

Very nice description of Gyokuro very sweet a bit salty seawead flavor, Changes from sweet to almost broth like. Its very good.

Have you thought about purchasing/using a variable temp controlled kettle as opposed to a thermometer? Most can also hold temps for continued brewing.

That is indeed a variable temperature kettle that we use. Unfortunately the Adagio one really only has two reliable temperature settings, and for a tea as sensitive as Gyo, I've found that the thermometer is quite handy.

Yame gyokuro tea is smoother than Uji cha's gyokuro but also lacks the hint of deeper greenness or depth with a slight bite that distinguishes top Uji gyokuro. I do not take it down to 130 degree but prefer it higher at about 150. The key for me is not to let the tea leaves sit too long in the water and to move it along. The third round I find usually th emost satisfying.

What do you think of room temperature water for 15mins for the first infusion to get a thicker, more umami brew?

Frankly I'm not sure as Gyokuro isn't a normal brew around me any longer.

Tried this method yesterday and it is a kick in the head with Umami, makes you want to savor each sip. Then started increasing the temp and going for the normal brewing times.

Went through Green Tea Merchant and ordered the Gyokuro Hoshino and Okabe. They have a US Office and received my order in a couple of days, great customer service as well. Just another option for Gyokuro.

You should have intermittently poured the tea into cups (until there's nothing left in the pot).

general question: how much time should you wait between your steepings at most? cause the leaves still remain in a bit of water in the kyusu...

Hi Stinga, Thanks for the comment and very good question! For sensitive green teas like this I would recommend sessioning it all in one sitting. I've noticed a difference in tea sessions when coming back to resume a session after a few hours. In my opinion, for Chinese oolongs and pu'erhs this time gap affects the subsequent session much less than teas like this. If you were wondering more about 5 minutes vs. 10 minutes, I wouldn't worry too much and do whatever is most comfortable. Hope this clarifies and cheers! -James

Hi rajTrondhjem10, Thanks for the comment! That's a good question. I'm definitely not any sort of a Japanese green tea expert but you can get pretty thick gyokuro if you brew it up with a high leaf to water ratio. There's also thick matcha as outlined by ***** below. As far as Chinese teas go, I'm not as sure. Probably some robust white that can take full boil! Hope this helps and cheers! -James

I checked and 4 ounces of water is like 113~ml. 8g i 113ml? Thats a lot, I use like 3-4g for 100ml when brew green tea

Hi zOMGLaserGunzPewPew , I got this from ebay. I'd recommend doing that or Yunnan Sourcing. Going to your local Chinatown might work as well depending on where you are located. Cheers! -James

So why have you guys stopped drinking Japanese teas? Tastes changed? Doesn't appear that it was a matter of discovering new teas you liked more, as by this time you were already drinking Taiwanese and Chinese oolongs etc.?

Great vid; but (it might be just me) I cringed a few times throughout the video, because you didn't warm the cups with the water, and mainly when you started shaking the teapot 😅😫... Might be just my annoying perfectionism though.
