It’s cool to see how consistent the briquettes burn compared to lump and to see those spikes from lump I’m guessing since it’s all natural it’s less consistent but can get hotter with the same amount for less time. Great video and info as always brother. 👍🏼

I normally mix and match all the time, more just to try and get temperature where it needs to be. Flavor wise I get that primarily from my wood. But you will pick up better flavors from the lump.

I love the smoke that comes from lump, but I really struggle with temp management on my offset. It's smaller with thinner metal, so I get a lot of swings. Like you showed, lump spikes and dips a lot more. I've found that briquettes make for a much more consistent temperature, and last longer. Thanks for this video!

Great video once more man! You know I appreciate your channel a lot cause I think we are trying to accomplish the same thing! 👍 I've seen a lot of people debate Charcoal Vs Briquettes to light the Offset smoker! In the end you are just trying to build a bed of coal to get the splits ignited. With this purpose in mind, both (Lumb and briquettes) get the job done! Wouldn't you agree that this discussion is a bit overrated? At least for beginners I would recommend briquettes just because it provides a more "even" heat. Cheers from Finland!
@ComparisonCooking
@ComparisonCooking 3 года назад
I completely agree, this discussion is completely overrated. Just like a lot of topics people nitpick over in Bbq. I’ve seen a lot of people change their minds over the past few years and start being open to new methods. But some people what to make a mountain out of a mile hill on some of this stuff. Thanks for watch and keep that smoke rolling 👍💨💨

Thanks for the info I use a mix of lump and briquettes. My question is can I add lump coal to the pit without burning them first to avoid that nasty smoke like briquettes?
@ComparisonCooking
@ComparisonCooking 2 года назад
If your are adding a handful or two every half hour/hour you are fine. If you are dumping a whole charcoal chimney half way through the cook, you might want to get them burning in the chimney before hand. I’ll add a handful every half hour typically. Around the 5 hour mark though I’ll have to get another whole chimney going if I’m trying for a 10-12 hour cook.

I didnt like the wide swing in temp in my stockade. So i modified it. Now i read the same temp or within 5 degrees from left to right. I start with lump or birquets and add logs. Dont need to add more charcoal till 2.5 hours in. ( I am adding logs thou during thst time.)
@ComparisonCooking
@ComparisonCooking 3 года назад
I did a modification and got the temps really close for about 10 more cooks. Went out today and the temp was off by 50 degrees again, pretty strange. Went with briquettes to wood only today, and temp swings were all over the place. If the winds blowing its a pretty finicky pit!

this is a great video really useful.. Do you think it depends on how good your lump vs brick is? I certainly have found that cheap lump vs brick doesnt burn has hot and certainly doesnt last at as long as brick. So I am using a combination of brick and lump, but I am using a cheap offset to practice fire management to then upgrade to larger.
@ComparisonCooking

Definitely, I used to use cowboy charcoal all the time, then I got a bag of Fogo, and it burned 100f hotter with the same amount. I also normally use a mix of lump and brick 👍

did you let the metal cool all the way back down to starting temp of the kingsford? also was it warmer outside when you used the lump, being later in the day? im not hating on your methods bud, just been something i been curious about myself anyway. i would think it would need to be a two day experiment, same starting and ending factors. unless there was a clear and obvious winner. 50 60 degrees doesnt impress me with those factors involved.
@ComparisonCooking

I would agree with during the day, moisture changing on a wood stack after baking all day in the sun. Unfortunately, the conditions will always slightly be different even if I wait the next day. From all the times I’ve used lump, and all the research from others bbq people. Lump burns hotter. Thanks for watching and the input

Do you recommend getting a basket for your charcoal? Does that make a difference? I am assuming the air flow is better.
@ComparisonCooking
@ComparisonCooking 3 года назад
If the grate is high enough up and you get in a good routine of adding wood and charcoal throughout your cook you don’t need one. However if you use a lot of charcoal it is helpful keeping it all lit and close together. Can always try it out a few weeks into experiment, don’t need to get it right away.

@@ComparisonCooking I wondered if you knew if the walls were as thick on the Signature Vertical off set by Dyna Glo as the Signature Off Set Barrel smoker that is currently out of stock. I read somewhere that the steel is not as thick on the Vertical but otherwise good. The Dyna Glo Signature Barrel DGSS730CBO-D-Kit is currently out of stock all over the country. BurningBrisket gave it glowing reviews and no Cons. I have been looking since February. I finally called Dyna Glo and they said they will have them back in stock in June. I was poised to buy the Vertical offset until they said they will be back. That is the smaller Barrel off set and it runs about $344 to $400. Read Burning Brisket reviews. They like the vertical off set also but said the walls were a little less steel and not as good for cold weather. How cold is cold?
