Ingredients
400g rice vermicelli, presoaked 15-20mins
3-5 birds eye chilies
5-8 cloves of garlic
2 fish cakes
1 cup of dried tofu
3 tbsp chili paste
1/2 - 1 cup of chicken
1/2 - 1 cup of prawn
1 cup cabbage
1 cup mustard leaves /choy sam
2 tbsp oyster sauce + 3 tbsp water
2 tbsp sweet soy sauce
1/2 tbsp black pepper
1/2 tbsp white pepper
1 1/2 tbsp seasoning powder
1 tbsp sesame oil
4-5 tsbp dark caramel / dark soy sauce

Method
Heat wok with oil. Sauté garlic till slightly brown. Add chili paste and stir for 30secs. Use low heat. Add chicken, fish cakes, dried tofu, chilies, oyster sauce with water, sweet soy sauce, black pepper, white pepper, seasoning powder, sesame oil, 1/2 cup water and lastly prawns. Combine all. Use medium heat and let it boil. Add vegetables and stir well. Add rice vermicelli, dark soy sauce and 1 - 1 1/2 cup of hot water (depends how watery you prefer). Off the flame when the noodles soft.
