Old Fashioned Beef Pot Roast - In the Pressure Cooker!

This is an old recipe, pretty much as I've been doing it ever since I can remember, and not far removed from how my mother did it when she was raising three hungry kids. It's pure comfort food in the truest sense of the word.
The pressure cooker contributes two aspects to the cook. First, the roast is actually totally cooked and falling apart tender in 45 minutes, not the typical 3 hours for a pot roast. Second, the pressure and temperatures inside it infuse all the flavors together in ways that just don't happen the same any other way. I've done pot roasts many times in the oven, and they're fine, but I always come back to the pressure cooker when I want it MY WAY.

Love the kitty!!! I'm 45, my mum used to cook cheap economical but good food in a pressure cooker in 80s Britain. Meat and two veg ruled in our house. I often follow her example sometimes for Friday night dinner (shabbos) cooking a joint in red wine vinegar and ginger to give an amazing sauerbraten. I blend the veg and liquid to make a delicious nutritious sauce and serve with potato kugel. All cooked in 50 mins.

It keeps you grounded when you go back to your roots now and then. Every time I make this it reminds me that the old fashioned ways are every bit as valid today as ever. To me, there's just no better pot roast than how my mom did it, and no better cornbread than a 100 year old recipe in a cast iron skillet. And I've made a meal of cornbread more than once, myself. Man after my own heart. Been using, , the old fashioned pressure cookers, for 60 yrs. Have 8 different ones from 4qt to 22/23 qt.....LOVE THEM. My Mom taught me how to use them. Would rather use one of these than the "new" electric ones. The "jiggle" is part of the pleasure. Thank you for sharing

I figure watching the jiggly rocker on my pressure cooker is a good reason to sit and relax in the kitchen. You shouldn’t leave the pressure cooker unattended anyway. Good time to have tea at the kitchen table and take a break.

I dunno why but I don't trust the electric ones. You can't beat the old simple types from the 70s. Mine is made by Tower and bottom pops up with different colours depending on the pressure. Blue for fish at 5lb, yellow for veg at 10lb and red for meat at 15lb. I do my meat on yellow as I'm always a little nervous of pressure cookers, even though I've used them for years.

Everything you used is what my grandmother used when she cooked. Most of the time, she made pot roast on the stove. She used her pressure cooker for park chops & scalloped potatoes or Swiss steak. YUM!

+Diane Milligan Thanks for stopping by! Apparently, your grandmother and mine went to the same Tupperware parties. LOL But seriously, this recipe is how my mother did it, and how her mother did it, and you're another of many who have said the same. There are some recipes that seem to be universal, and pass the test of time. We can mess around with them, but we just can't seem to improve on them, and an old fashioned pot roast is one of them.

Well done, sir! I've been cooking my pot roasts in a slow cooker that takes 4.5 hours to produce a similar meal. Now that I recently found my mom's pressure cooker -- and thanks to your video -- I can shave that down to about 1.25 hours, including biscuits or cornbread. Yes! :D

Ha! We were raised in a different era, when people weren't afraid of food. Glad you enjoyed the visit! To me, a pot roast in the pressure is a real treat. I much prefer it over one done in the oven. Some old recipes withstand the test of time, and this is one of them.

Loved your video. Reminded me of the way things were when I was growing up. Delicious home cooked meal with the whole family. Still make my pot roast that way. Taught my kids and the grandkids. That was the good times before TV dinners appeared. Thanks so much.

Yehhh...finally I see a proper pressure cooker. I have a 1973 kitchen craft pressure cooker. Got it fixed and will never part with it. It has made some amazing foods. I would never trade it for an new instant pot.

John, After adding your veggies pressure 'less' than 10 mins... maybe 4-5 mins. Your veggies will be nicely done & NOT mushy. TY for the wonderful tips on 'browning the roast' and different seasonings.

Looks real tasty. I have my Granny's 1930s pressure cooker, land sakes that thing is heavy but its in good shape and gets the job done even on my 1879 wood cook stove. You cook the way I do in a lot of ways but have to say your a lot neater than me. I have a large family so everything I cook has to be doubled to feed all the kin. Glad you enjoyed it! It sounds like you have quite a collection of them. Since I'm cooking for one, this 4 qt model is perfect for me, and it's been serving me well since the mid 60s. Thank you very much for posting this recipe. I’ve been looking for one close to the way my mom made and this is definitely it. Only thing different is that I remember her browning the meat right in the pressure cooker and not in a frying pan and that she used celery as well.

I have a 2-year-old Presto pressure cooker, the kind you use on your stove. It’s a stainless-steel cooker with a “rocker.” I just pressure cooked an artichoke this week-artichokes always pressure cook perfectly. Going to be brave & cook corned beef tomorrow-following the Presto instruction book, of course. Your pot roast looks delicious!

We'll be trying it this way in a few hours, looks perfect. I really miss round bone pot roast cuts, chuck never seems to turn out as tender. Can't wait to try your method, it's almost identical to what my wife and mom made- hoping the pressure cooker will get it to cut with a spoon. Looks fantastic in your video! ;)

Definitely cooked it the old fashioned way! My mother had a pressure cooker just like that. My favorite thing would be the corn bread. I love corn bread and butter and have made a meal out of it many times. It looked wonderful Moosie. Cooking like your mom. No better way. Hugs!

i always loved the way the meat just falls apart (i have to admit..i serve it in a big bowl..so i can drown everything in the gravy.....maybe not heart healthy, but definite comfort food !)

Even after making sure all the steam has been released, I always cover the pressure cooker with a hand towel and use tongs to remove the regulator, so I don't accidentally burn myself. Ouch!! I use my leftover meat to make tostadas, tacos or burritos, or machaca with eggs. I just shred the meat and fry it in hot Mazola Corn Oil and season with salt and onion/garlic powder.....very Yummy!

Try cornbread mix with buttermilk, let the oil come over the top it will be crispy, I always use aunt jemima, I love your video.

Thanks for the embed, Larry! As hard as it is for any of us to get views anymore, it sure can't hurt. And yes, I could just as easily do this on my Coleman stove on a picnic table in the woods, as I can do in my kitchen. If you want an elegant feast, there's no reason you can't have one. I checked out the forum, and it looks pretty active.

Haha! Between the two of them, they do keep a watchful eye on me. I've used canned milk in cooking and baking for many years, and it works beautifully. I rarely drink milk, so I don't keep it around because it'd spoil before I used it, but cans of Carnation in the pantry are always ready and fresh.

That's nonsense. There is absolutely nothing wrong with his pressure cooker. I have 3 stove top pressure cookers and those Instant Pots can't hold a candle to any of the stove top ones. The Instant Pot is just a gadget for the pressure cooking challenged folks.

Thanks for the good ideas. I make an awesome Jerk Boston Butt in the pressure cooker but haven't tried a Pot Roast yet and didn't want to mess it up. I was unsure on the cooking time. I'm going to use the same procedures except I'll use some tomato paste with some beef consume in addition to the beef stock. A few sprigs of fresh Thyme instead of dried. Add the carrots and potatoes and cook for 15 more minutes. Release the pressure from the pot and add a bag of green peas. Cover and let rest. Once cooled down remove everything, strain the juices, add some flour for the gravy. Mix all of the meat and veggies together along with lots of the gravy! Now that's a Pot Roast!

Now I am starving, mouth watered to the point 🤤 on myself trying to think of what to make for supper and had no idea what the timer was for that I ran across my 78 yr old father's kitchen drawer (he was out & about) when I had found it so I google lens'd it. to find out what heck it was doin in the kitchen drawer?! I was thinkin that may be it was something for stripping wires with or something else! Nope that was not it! I think I have seen the cooker in the cabinets b4 I had moved out & started my own family 15 yrs back from today. So now I am wondering if he STILL has the entire cooker! Then I am going to convince him to let me cook with it as long as he has your recipes ingredients! I have never put cinnamon in anything but french toast batter or pancake batter, & topped some cookies & cupcakes with it, but I am very curious 🤔 as to using it in a pot roast recipe! I would have prolly never guessed cinnamon for some reason I was thinking that maybe ya were gonna say ground walnut or pecan or almond or nutmeg was the one I was really leaning in to and was absolutely 🤯 when ya said cinnamon! Anywho I have some cookery things to see if I can find & some convincing to go and get what Dad don't got stocked in his cabinets, for some good ol fashioned supper! I am sure he would love! 🤔Hmmm wondering if I can use a grill outside to cook the corn bread in the iron skillet. I may have to Google that 🤦🏼‍♀️ bc I only know that ya don't use them for glass top ovens! Thanks you very much for showing me how to use a mirror matic timer and how to cook a better roast! I will have to check out more of your videos bc you have the kind of skill that a lot of people lack of in videos and make me skip thru theirs where yours was direct to the point and explanatory all at the same dang time, so for once I have been able to be entertained without using the fast forward at all and was interested in the final food! not sure yet of what other videos ya may have up but this one only did not show us how ya made the hillbilly loaf (a.k.a. 🌽 🍞). Hopefully ya have one up so I can learn from it too! Closest thing I have found in my dad's cabinets for ingredients is beef stew in a can which the guy I am with for 20+yrs calls that stuff beef flavored human dog food! So looks like I am going to the store for sure! Thank ya very much from down in the b.f.e. hollers in Indiana!

Malik Martin, excellent point. When the roast is big enough you have to stuff it into the pressure cooker, it'll tend to steam itself rather than brown. The point is to brown it all over, and the skillet gives you the space to do just that.

Hmm, its almost 1 AM and I believe I am "food intoxicated" from watching this! I have a pressure cooker, was my Grandmas that's almost identical to yours but leery of using it as its made of aluminum and I hear that leads to health issues.. Regardless what you cooked looks good, and I may attempt cooking with it and go from there. The cast iron skillets are a MUST have as well.

Hahaha! I find that it's dangerous to watch cooking videos late at night. Anything you've heard about aluminum cookware leading to health issues is a myth. I've never heard it at all, and a lot of our cookware is, and has been, made from aluminum for most of a century, if not longer. I have modern high end aluminum pots and pans that I've bought withing the past few years, and I have old ones that are decades old. I use them every day. My Mom cooked in aluminum, my sister still has her 75 year old pressure cooker, and uses it, and this pressure cooker has been serving *me* well for almost 50 years. I've never known of any of it to ever cause health issues. Go ahead and give it a go. The pressure cooker is well worth learning to use. I just finished using this one to make stock from the leftover Thanksgiving turkey carcass. And yes, no kitchen is complete without at least 2 or 3 cast iron skillets. Thanks for stopping in!

Awesome! Thank you for the information regarding the aluminum! As for the skillets, I bought 3 in the past, then wound up removing my microwave from the kitchen... Leftovers are worth the extra time reheated in a cast iron skillet..

It's growing quickly. I've been on it only a few months, right from the beginning. Let's face it, on a camping trip food prep is half the fun of being out there. And Cast Iron cooking is taking off again now. Grandma would love us now boy... If you can do any more, especially if you do anything with a Dutch Oven I will embed you again over on that forum.

Pressure cookers are definitely good with stews and soups. Bean dishes, too. I've done assorted meats and roasts in the Crock Pot, and this recipe would probably do very well. With the pressure cooker, though, the high pressure and high temperature steam (it runs up to well over 250°F) both tenderizes and fuses the flavors in its own special way. Both ways will give good results, but IMHO the pressure cooker version is better.

Hi! Thanks for the updade on the "old" style pressure cooker! Not everyone wants to spend $200 for an Instapot. It all looked delicious but maybe the carrots could be without gravy. Pewrhaps you could also do a video for center cut pork loin with sauerkraut?

good vid. i enjoy using the pressure cookers too. i have several sizes of stove top ones..they have been taken over by the electric one .. it is fantastic. slow cooker, roaster, steamer and pressure cooker. i like the feature of the timer including the menu to select keep warm. it is a fantastic help for holiday cooking when the oven and stove top are in high demand. the roast you cooked looks wonderful....thanks for sharing. i have never tried cinnamon on a roast..... next roast for sure.

wow he really does have an old fashioned pressure cooker. I thought he was going to put the cat in with the roast and let it explode. I tried the recipe without the cat using 2 psi and natural release. but good

Yep, I really do. It's 50 years old and works as well as the day I got it. And nope, no cats exploded during this cook. LOL

I've seen other people do the same, keep it around since they don't use milk often. didn't think of that being the reason. makes sense!

Did somebody tell you to shut up? Let me tell you something Mister. You are doing everything right. You got the cast iron pan ( looks like it ) which is better than the non stick pans, it is proven the chemical coating is terrible for human ( we are ) and above all you still got your your old fashion pressure cooking pot. Good for you. You know the new ones are called " instant pot"? It uses the same cooking method, pressurized. Like for instance the old fashion blender is now call the Bullet, same thing. The dish looks yummy, I noticed somebody confirmed already the dish tastes great ! Thumps up!

Totally overfilled which could clog vents. You're only suppose to fill 2/3's full. After the roast is done, let it stand up, then throw those veges into the juice and it will come up to pressure really fast, within a minute and the veges will be done in 3 minutes.

I've never used a pressure cooker either. I've always either roasted my pot roast in the oven or used a slow cooker. I find that I prefer my vegetables oven roasted, so if I ever did this with a slow cooker I would probably still roast my vegetables in the oven. Although, I'd have to try it all in a pressure cooker first just to see if I liked it that way. :)
