Thank you so much for this video. I love that you toggle back and forth to show the difference as the colour changes. The dark amber foam/bubbles were the perfect indicator that the sauce was finished cooking. This is the best, and most informative video that I have found, Thank you!

I have made caramel 6 times, the first the consistency was spot on but it had a slight burn flavor. Since then it looks great until the next day when it all turned to sugar. So frustrated but I never added corn syrup, maybe that's the secret. Wish me luck.

This is pretty runny. If you were doing a filled cup, maybe. I would much prefer to make a soft caramel that you cut, then coat in chocolate.

No, no alternative. You can just leave it out but you need to be extra careful about not getting sugar crystals up the side of the pot, and swirling more gently.
