OLD SCHOOL BUTTER BEANS WITH HAM HOCKS
This is a very simple recipe for those creamy flavorful beans we grew up on
RECIPE:
1# dry butter beans
1 cup chopped onions
1 cup chopped celery
3 quarts chicken stock
1# ham hocks
DIRECTIONS:
Place ham hocks,celery and onions in large pot
Add enough stock to cover hocks
Simmer for 2 hours or until tender
Add beans to ham hocks and stock
Simmer beans until tender and creamy[ about 45 minutes]
Season with salt and pepper ( if needed )
Enjoy with cornbread

My daddy used to make these for us when we were children. I miss my father so much. Thank you Chef Williams for your videos, kindness and cooking wisdom. In the olden days, (we both are too young to remember this) people used to sit on back porches and wait for leftovers, I would have sat on your back porch for sure. My grandfather was a tomato and bean farmer and after the harvest he would open up his property so people could glean his fields for food. Happy Sunday to you and your precious family.

My dad used to cook this a lot. It was good too. He used to cook either smoked neckbones or whole hamhocks. He included white rice with it and would pour the bean soup over the rice. I miss his cooking. This brought back memories. I am saving this video as my favorite.

Yes ma'am!! I would place the ham bones leftover from the Easter/Christmas hams in airtight bags & freeze... pull them out when I cook these beans with some sliced smoked hocks 😋😋😋😋 and Chef Jeffery is correct, season at the end with your peas & beans .... Beautiful job Chef!!!!

Chef Jeffrey this is the type of meal, I grew up with in the country. West loved butter beans with ham hocks, and cornbread. It look so, so delicious and going to cook some soon. The marrow in the bone produces a chemical reaction with the beans which changes the texture of the beans as they simmer. I always leave them in & them separate them from the meat before serving. Remember cooking is also chemistry.
