OLD SCHOOL TURKEY BRINE
brining a turkey is so important to achieving a moist juicy flavorful turkey!!
A good brine needs salt ,acidity ,herb flavor and a little sweetness!!
This recipe is simple and when u soak your turkey in it for 24 hours
You will have that nice juicy moist and flavorful turkey that u will be proud of
This recipe is for a 10-20# turkey
RECIPE:
1 gallon water
3 oranges cut in wedges
2 bay leaves
1 sprig fresh rosemary
1 sprig fresh thyme
1/2 cup kosher salt
2 tablespoons whole black peppercorns
Add all ingredients in large stock pot and bring to boil
After coming to boil
Remove from heat and let cool
Add to turkey and let sit 24 hours
OLD SCHOOL HERB BUTTER!!
This is a simple recipe that I use to baste my old school ROASTED turkey
You can use it on ROASTED CHICKEN also
Recipe
8 oz. soft room temperature unsalted butter
1 tablespoons fresh chopped parsley
1 tablespoons fresh chopped thyme
1 tablespoons fresh chopped rosemary
Mix all ingredients together and baste over turkey before cooking
Also you can use it to baste through the cooking process

If you don't brine that turkey or any game meat you're truly missing out on the flavors that it releases. Truly anyone that doesn't know what " roux" is hasn't cooked a day in their life. Roux is the easiest and oldest simple recipe in the world.

Thank you! I am 70 and never knew about brine. My husband never liked the turkey coz it was too tough. Now I know what to do! My Ukrainian mom never taught me this. But she made great peirogis!

Chef is so KIND, THOUGHTFUL and PATIENT. I will say it...if you leave the bag in the Turkey......Your bird is UNCLEAN!....you KNOW you did not WASH that fowl properly. Got the nerve to serve it to people. That's exactly why I DO NOT eat everybody's FOOD! LOL 😆 😆

Even though I do my own brine, I still watch others. But these days compound butter and brine goes a long way with the old school recipes. Support gang here... T and t kitchen

My dad passed away a few years ago 😟 last year was the first year that I try to make the turkey that was always his part❤️ and we haven't had him here for the past 2 years so the turkey hasn't been like my dad's which was really moist and flavorful. So I'm going to attempt to make it again this year and using your recipe and also your Mac and cheese because it always turns out too dry I have trouble with the roux part and how much to put in but I did make your red beans and rice recipe last week turned out amazing 😁 I really enjoy your cooking videos remind me of my dad in the kitchen.

Chef Jeff, for the very first time (I'm 68), I followed your instructions and brined my Thanksgiving turkey! It was absolutely amazing -- and it wasn't even a whole turkey, just the turkey breast. @@lanagriffin33 yes I have done for many many years, wrap in aluminum foil put into oven @450 for an hour or on your grill for smoking... I have a smoking torch for inside smoking that I use often

Chef Jeff, I use apple cider juice and brown sugar along with your ingredients to brine my bird. I also put ice on top of it to make sure that it is covered correctly. If someone cook a turkey with the bag and neck in it, do not eat any part of that bird because you will get sick from it. Just to think about it will make me sick. Remember this think about it: "Who is cooking this turkey at all time?" LOL 😆 🤣

Good morning Chef. I’ve never brined a turkey and now I know what was missing. All it was, was the brine duh lol We usually fry the turkey but this is a nice change up. Always use fresh herbs. And I roast my garlic in my herb butter mixture. It comes out so good. I love your version. I'll have to try it out!

Hello Chef Jeffery and everyone! Excellent video Chef, you are correct about brining your turkey, makes it so moist and flavorful. That’s what I going to do tomorrow, brine my turkey. Turkey is bland without brining and herb seasoning. I put my turkey in a cooler and brine it, just add a bag of ice, so good.?Thank you for sharing and teaching the best way to make a delicious turkey. Have a blessed day everyone!

I’m just a youngster from NYC who values you so much Chef.. I’ve always valued old school cooking and I can rely on you to teach me plenty.. I love cooking from scratch.. I know all of my aunties, uncles and grandparents would be proud of me to see that someone my age is so adamant about cooking old school and from scratch.. I was raised mainly on my Caribbean side so cooking Caribbean food is very easy to me.. But I’m grateful to have you help me finesse dishes that relate to my Southern side of the family.. Idk if you eat hogs head cheese or not, but if you do I’d love for you to make a video on that..

I brine my turkey all the time, even when I roast turkey wings I like to brine them also. I make an unsweetened apple cider brine. I like to see how others make their brine. Yours is similar 👍👍⭐
