My mum taught me this dish and I've been obsessed ever since. You honestly do not have to cook your rice but if you would like to then simply half cook the rice in some water, drain it and then follow my steps from when I add the drained rice to the chicken and vegetables.
Ingredients I used:
1 cup white rice, I used basmati (I like the brands Laila and Kamran)
4 chicken thighs, washed and without the skin
1 potato
1 carrot
2 peppers (different colours)
1 whole white onion
seasoning: ground cumin, coriander and chicken seasoning (I liked to use maggi), turmeric (I use about a tbsp of each on the chicken and 1 tsp each for the veg)
1/4 cup oil, I use the leftover oil from onions I fry
fried onions (optional)
Step 1: place rice in bowl and cover with boiling water. Place to a side for 30mins. After 30 mins, rinse several times and drain.
Step 2: wash the chicken, and place in the pot you are going to use. Season the chicken. Make sure to place the chicken with the bone facing up. Place the vegetables on top with the potatoes and carrots first, then the onions. Add the turmeric and then the peppers. Season with the same seasoning.
Step 3: now place the drained rice on top of the vegetables, making sure the rice covers the veg. Don't worry if a few poke out! Drizzle with the oil, and add the fried onions. (you can skip the onions. sometimes I even add fried sultanas).
Step 4: Cover with foil or a kitchen towel, place the lid on and place on the stove on high heat for 10mins. This will give the chicken a bit of colour. Then lower the heat to the lowest flame and let it cook for 40-mins. Try to cook it all on your second to smallest hob! You'll know the meal is done when the carrots and potatoes are soft! Enjoy!
