This looks so amazing Catherine!😍 I love one pot dishes, especially ones like this that are so comforting!😘 Several people in my family are on the Keto diet. I think this would be good if they used the cauliflower rice.😚 Cauliflower rice is so good when it's sauteed in the skillet with the onion. I also think this dish would be good as a Mexican style meal.😋 Just adding your taco seasoning and Mexican cheese! It would be like a Spanish chicken and rice!☺️ Your recipes are so wonderful and you give us so many great ideas for easy incredible meals!😁 Thanks for sharing another great recipe!🥰

I absolutely love all of your casserole recipes. I'm a baby boomer and my mother worked full time. I grew up on casseroles because they were quick for her to put together and she could have my sister and I do the chopping, grating,etc. when we got home from school. I have made several of your casserole recipes along with some of my own. My husband had a ,stay-at-home mother so not many casseroles. He now loves casseroles

Looks good. I think I'd add a package of chopped spinach instead of the parsley, and serve it with some halved cherry tomatoes on top, because colorful food is always more appealing IMHO. 😊

Looks delicious. I would add some curry powder with the other spices when seasoning the chicken at the beginning. 1/2 cup of frozen peas would be good too.

Really enjoyed this easy recipe on a night I did not want to cook! The 1/4 tsp list of seasonings was just right for 1 1/2 # of chicken, expected to need more! Thank you for this recipe. It was a hit and will make it often! 😊
