I love the idea that Sephiroth just has a full orchestra and choir wherever he goes. Like "Yeah, I could easily kill cloud but why not have an awesome battle theme to boot?".

These are higher quality versions of how they actually sounded compared to FFVII, which was compressed to Hell. These are how they sound on order from the version played in Kingdom Hearts: Final Mix when fighting Sephiroth, which is higher quality since it's on the PS2.

They're speaking in Latin. Venis means come. If you take the lyrics and translate them, they're saying "Come, come come don't let me die." On the second verse.
Apparently some of those verses were actually taken from a compilation of medieval poetry called Carmina Burana according to the Final Fantasy wiki, and starting with Advent Children Complete later versions of this song would have slightly altered lyrics that were more thematically fitting, with the altered versions also adding the implication that the singer is Genova, which in retrospect fits the original lyrics as well to some degree.
i like how without the music, you can actually hear the little cheat game devs used to need to do for the most out of there audio. (fewer audio clips to store = more room for the game. that's why the words sound cut out and repeated. because they literally are.) they would also do this with a few other sounds, and pitch them up and down for different things going on.
The lyrics (except for "Sephiroth") were all taken from the Carmina Burana, which was heavily used as bombastic movie trailer music with lots of Ominous Latin Chanting in the 90s. Uematsu wanted to evoke a Carmina Burana feel for "One-Winged Angel". In the bit from Carmina Burana you're probably familiar with, you can even hear the "sors immanis, et inanis" bit.
