Kimi Werner gets a visit from her dear friend Sam, @CaptainPotter . She introduces him to a common yet underutilized fish, opelu kala and together they make it into the most succulent fish burgers while having some heart opening conversation and lots of laughs.
Recipe:
Opelu Kala filleted and minced
Carrots onions garlic- diced and sautéed
Green beans and cilantro- chopped and added raw
Hawaiian salt and cracked pepper
Egg or no egg? that is the question!
Sauce:
Mayo
Chopped dill pickles
Lemon juice
Dill
Pepper
(We added some gourmet truffle mustard which was unreal!)

Grilled chilis
Grilled hamakua mushrooms
