Open Air Grain Spawn? Attempting Lactic Acid Ferment Pasteurization with Corn for Growing Mushrooms

A while back, I was researching methods to create grain spawn without a pressure cooker. I stumbled across an old post on the Shroomery of this dude who was doing lactic acid ferments and apparently was able to colonize grain spawn in open air, free of contamination. I decided to give it a try.
The basic of this procedure are to soak grain for a day, boil it quickly so that it doesn't germinate, then take advantage of the naturally occurring yeast and bacteria thats present in the air around us. Over a couple weeks, the lactic acid produced by the fermentation should drive pH down low enough to kill off everything we don't want on our grain, then we can inoculate with our culture of choice.
While I haven't been able to produce fully colonized spawn yet, I did have some pretty good success by producing grain that stayed visibly free of bacterial and fungal growth for over a month!
I'm definitely going to give this another shot with some modifications, I'm really hoping to be able to produce some grain spawn without a pressure cooker!

I really wish I could add an update to this video without having to upload another video....the enoki is colonizing the corn! Didn't think it was going to, but it's taking over! I put a pic up on my instagram if you're interested.

@@OneEarthMushrooms ...be careful with enoki. It breeds salmonella. It should never be eaten raw. If not extremely fresh it shouldn't be eaten at all.

So cool! I found your video because I’m experimenting with something similar. I fermented far more feed than my birds could eat, so I wanted to see if I could spawn oyster mushrooms on it. I strained it off and added saw dust spawn. I know people grow on spent brewing grains, so I think it should be possible. With the ground, fermented game bird food, it absorbed so much water that I think gas exchange may be a limiting factor. I’ll let you know how it goes!

To be honest, I was assuming this was a tutorial for a successful technique. But at the end I wasn't really disappointed. The video was entertaining and it reminded me that it often takes mostly failed experiments to come up with something that works in the end. And now I saw your update comment about it actually did colonize the corn.

Really liked this video for 2 reasons. 1) it supports the citizen scientist that lives in many of us 2) it might encourage people to review non-viable techniques from yesteryear that might be viable today. Thanks @OneEarth Mushrooms!

This would probably work great for king stropharia, they love the extra bacteria, and it'll stop green mold. I've actually have done this on accident in the past with oyster mushrooms. In my experience yeast helps with colonizing. Almost like a secondary colonization.

Neat experiment, thanks for sharing. I have done the boil three times method - just bring it to a boil three times over three days, and that worked. The first day is all about getting bacteria endospores to reactivate then the following days kill them. I did my boil up experiment in the microwave in a PP5 ziplock container. I've also made agar using that method.

Thats a really good idea, I'm going to try this. My goal is to figure out a method that anyone can use at home without a pressure cooker, and eventually find a reliable way to not use a grow bag. Were you boiling the jars? Or boiling the grain over three days before you put it in the jars?

Thanks for this video, I always do lacto fermentation and hoped it will work. Maybe it will work if you do second boiling after the fermentation is done to kill the Lab and yeast before inoculation. Lab will reduce the ph significantly (below 3.7) while mycelium grow at ph 5.5. Adding baking soda will help increasing the ph back. It will be helpful to have ph meter to make sure your ph is around 5 to 6 You can keep the water of the fermentation to start another fermentation faster by adding one tbsp. The fermentation process will start after 24 hours instead of 5 days of waiting.

I have no experience in lacto fermenting substrates. HUGE kudos in trying! Although, I've read of a cold, hydrated lime pasteurization process and I think that might be an avenue for you, keep experimenting tho. And please do yourself a favor and use those syringes to make your own liquid culture. I don't mean to sound arrogant, I appreciate your endeavors, and fully support your cause brother, yet I've noticed that too much inoculant can stall growth and breed bacteria. I think going straight from syringe to sawdust might work as well, add some coffee

I'm making syringes today! Going to use some of the water from prepping rye spawn, and adding some honey for more nutrients. Hopefully it turns out. I haven't done a hydrated lime pasteurization yet, but I'd definitely love to try it for straw. It may work for grain, I guess I won't know until I try!

You can also try nixtamalization by mixing lime water/NaOH with corn when boiling and soaking overnight. It helps remove the pericarp and changes the texture of the corn.

I've never grown mushrooms but I do lots of fermenting. After straining your popcorn, a soak in tap or distilled water is likely to help a lot with acidity. I'd bet 15 (or 60) minutes in a fresh soak and/or rinse would make a notable difference in pH.

I use salt dissolved in water to lacto ferment without boiling. Salt draws out water from that being fermented hence preserving it and creates a conducive environment for lacto-bacillus (bacteria) present in it to grow and consume sugars also present in it producing lactic acid to digest it.

the corn was way too wet still, you can see that in the first jar. and if you are fermenting to lower the ph and not washing the grain, i dont think the mycelium grow. interesting concept though.

Hello. Such a great video ☺️. I saw some maize cob on the floor budding whitish mushroom spawn and they are everywhere. Can they be made to produce spawn or not? If yes how?

Awesome video. I love your experimentation and general approach to your RU-vid channel. Experiment idea: Prep grains using all typical steps minus PC to see how many jars you can successfully spawn before one contaminates. If you've already tried this, what were your results?

I'm prepping rye grain today for attempt #2 of this, I'll give it a shot! I'll do two lacto ferment jars, and two jars where I prepare like normal, but don't PC. It'll take a while for me to get results out, but we'll see how it goes! Thanks for the idea!

I tried corn for enoki and after two weeks enoki started colonizing the corn. I tried with oyster too and corn was colonized fast!

Broke Boi Tek! No lacto fermenting required, you get some contam if it's too wet but otherwise it works great and you can get away w/o a SAB as well.

Hey, there! So I read that mushrooms don't grow well in an acidic environment, and lacto-fermentation definitely causes the pH to drop and creates an acidic environment (which prevents a lot of other microorganisms from growing as well). So I'm guessing you'd have better luck using mushrooms that have a higher tolerance for acidity (if they exist :) )? I'm much more familiar with the fermentation side of things and less experienced with growing mushrooms, though, so I'm curious if it is possible to use fermentation in the mushroom growing process.

Yeah, I'm going to need to do some more experimenting with this. The varieties I've tried didn't do so great, so I think you may be right. Hopefully someday soon I can get some time in the garage to do some work!

My problem with this is how do you know youre getting lactobacillus from the wild source? Ive maked fermented peppers before in which you want lacto and not yeast so you make the enviromen horrible for little yeasties with salt, which you cant do because its also bad for mycelial growt, what you did was make a breeding ground for yeast, theres been open airs that "work" its just a numbers and scenario game.

Try soaking the grain in some liquid lactobacillus serum, you can make your own lactobacillus serum, goggle Korean natural farming knf lactobacillus serum just need rice wash and milk and a lil time to make its amazing stuff.

That's alot of extra work. Might as well PC them get the process going.. instead of waiting the time you could have a fully colonized jars

It’s counterproductive to lactoferment for all that time (the idea being to allow the lactobacillus to thrive and take over any other contaminants that might be present) and then just let the popcorn sit out in the open for an hour to dry, giving an opportunity for new contaminants like mold spores to be introduced. That’s like pressure cooking a bunch of jars of grains and then opening them, pouring them out onto the table for an hour, putting them back in the jar and just hoping they are still sterile and inoculating them. Completely defeats the purpose of pressure cooking them. I think the biggest issue with this experiment was clear though, your popcorn was way too wet in both jars. Funny enough, I searched for this because I suddenly had the idea to try fermenting grain spawn because I’ve been on a fermented foods kick lately lol. Not surprised it’s been done before and I need to find that tech you mentioned. I’m gonna try this with some rye berries and report back. See if I can devise a way to dry the fermented grains back to a healthy, not-too-wet moisture content without allowing an opportunity for new contaminants to pop in.

Just being honest the amount of work&time this took i would highly recommend just save up for a cheap pressure cooker before you try to grow mushrooms. All you need to do is add dry grain water sterilize and shake after. Simple quick easy.

First! ... Brother, valiant attempt at PC-free sterilization, im sad that it was unsuccessful at this point. You are on quest for the holy Grail of all mycologists....ie sterilization minus all the trouble! .... I have no doubt that if this is possible.... you of all people will figure it out :D . If I gave my 2cents... there are 3 major ways we sterilise a given object.... 1. Heat/steam 2. Radiation 3. Chemical So, by doing this "lacto ferment" tek you are attempting a chemical sterilization using naturally produced lactic acid to kill off unwanted pathogens, is that correct?... Wud it not be possible to use an artificial pure lactic acid soln (or different chemical) instead of using "natural" unreliable yeast generators?... Then after leaving to soak in said chemical for X amount of time... then boiling it off/neutralising afterwards (& then if necessary use a pH buffer/alkali to bring back to ideal conditions)? A 12% H202 Peroxide Soln is a bit unstable and within days at room temp turns into water & O2 .... this might be a suggestion??...then boil substrate afterwards to remove any remaining chemical from the substrate.... im not a chemist..... so my apologies if I sound silly. I think if you're gonna go for a chemical sterilization tek.... u need to find a suitable chemical that's cheap, non toxic to humans... can be easily boiled off/neutralized .... and doesn't destroy substrate.... And god only knows what that magic chemical would be without a lot of experimenting!! Lol .... peace mush love x (P.S im sorry if I make no sense... its been busy days at work and my brain is mush lol.... also that Enoki is voracious!)

@@zannxking4128 Yeah, absolutely correct, a chemical pasteurization. I'm sure there's still tons of bacteria in there, so we can't call it sterilization. That makes total sense! My goal with this tek is to keep it as simple as possible. Literally, just grain and water. But the idea to use another compound to achieve the same result more reliably is a great idea. People have been using hydrated lime-Ca(OH)2 - to pasteurize straw for a long time. I think the difference with straw is it's pretty low on nutrients, whereas grains tend to be a little more nutritious. Maybe I'm way off on this, but it seems like in a chemical pasteurization, you need to be able to change the pH of the entire grain, not just the shell and outside layer of the grain. So if the compound used to lower pH is too short acting, maybe it wouldn't be able to "soak" through the whole grain, and potentially leave dormant spores/bacteria deep inside the grain? I don't know, maybe I'm over thinking this! I'm thinking I'll have the enoki video up soon, I have a bunch of jars ready to fruit but no space to fruit! I also need to find a better solution for fruiting, I'm only fruiting in monotubs at the moment, and don't have a good spot to build a large, greenhouse style fruiting chamber, but I'm out of space in the monotubs. Wait until you see the crazy stuff this enoki is doing in the jars though, I swear that mycelium is sentient, it's trying to unscrew the lids and escape.

Personally, I think you're wasting your time, BUT, if you are going to do a lacto ferment, use whey. It's obtained by putting plain yougurt in a strainer with a piece of cheesecloth and letting the yougurt drain all its liquid into a bowl. Keep it all covered so bugs and unwanted microbes don't get in. Put the covered bowl/strainer in a clean fridge to drain for a day or two. What drains into the bowl is your whey and is a clean fermentation starter. Use it instead of open air(where you get dead flies and who knows what microbes)to start the fermentation. Personally I think you're more likely to succeed with an alkali like the hydrated lime. And once its ready, you should still use a flow hood or SAB to inoculate the grain.

What PH is needed to pastuerize the corn. Why not use vinegar or some other acid. No need to build a funnel, mason jar funnels have been around for hundreds of years.

Maybe try lactic acidosis bacteria serum. Directions to make it are on RU-vid. Use a micropore modified lid.

Seeing as you are trying all sorts of low tek growing methods and this one was sort of a success, I wonder if you could try a microwave bottle sterilizer to prepare grain spawn. This is the plastic pot used by mothers to clean and prepare baby bottles. I believe hospitals also use microwaves to sterilize certain instruments as well. It will be shorter than the weeks this took. Studies show, I believe, that 10 - 12 minutes on high kills of 98% of the bad stuff. It might be worth while giving it a try.

@@tjw2469 it's common to put them that way to allow gas exchange for mycelium, if you dont have a filter patch.. if it seals entirely, mycelium growth will stall out once the co2 level is too high inside the jar

Wouldn't it be easier just getting a pressure cooker? This process is already time consuming. Why add fermentation?

Not everyone can afford a pressure cooker. Access to reliable electricity across the world isn't as great as we have it in the U.S., so having a method that requires no pressure cooking may be helpful for people that find themselves in these situations.

Fermentation experimentation is always valuable. We don't yet know what benefits we may be missing from mycelium interacting with certain types of yeast and bacteria. These organisms are constantly cooperating in nature in order to break down food for one another. Nature's mushrooms don't grow in sterilized environments.

damn that was probably the worst case of wet spot bacillus I have ever seen. hey we learn from failing spectacularly. but seriously, just pressure cook them. it takes an hour and thirty minutes.

Use cracked corn Soak fr 12hrs Not 24hrs...to long smell stink Wash clean. Air dry 4hrs Steam clean empty bottle for 2hrs Cool it Put in the cracked corn and Steam for 2brs. Cool it ..do not open the can Then put in the mushroom syringe. Put a piece of tissue on top So there will be tiny air leak for breathing . Keep in dark place Make sure to use alcohol to clean hands table and can cover and lip bottles
