before i watched this, i saw a whole video of how homemade chocolate was made, and when they let those seeds ferment, the liquid drips down to a bucket . And frm there u can just drink it, supposedly its suppose to taste like jolly rancher 👀
If im not wrong, people do not usually extract cacao water since that pulp is very important in the fermentation process of the beans. If you take that away, the end result of bean fermentation would not have the same effect. The chocolate would probably taste more sour.
When I was young I didn't know chocolates came from the seeds of the cacao pod lol. I only eat the flesh and throw away the seeds, and when someone told me chocolates came from those seeds I tried biting it and it was so bitter, I thought they were lying.
here i Belize its common for us too to grow and harvest them. the Mayans (my grandparents)would dry the seed and grind it add water. there you go, cocoa drink, just add sugar, no milk, and it's a little spicy, but hella fine
Make sure you guys get fair trade cacao, cocoa, and chocolate because fair trade gives the farmers fair wages. It might cost more, but please help out those farmers.
