I've wanted to make homemade Kit Kats for a long time. I had the right mould, I get asked to make a recipe for them for ages, but the one time I try to make them, every supermarket in the UK didn't have the wafers I needed... so I made my own homemade wafers, to create my very own gourmet kit Kat chocolate bars! Potentially more like a kit kat chunky with the size of the moulds, but hey chocolate keeps getting smaller, so lets make it the way we want!

Not anymore - they recently (last couple of years) changed the 4 stick ones to plastic packaging. Not sure about the 2 stick ones

EvelynRobinson I don’t know if anyone in any of the other countries did this but here in the US we always pretended that it was a “Golden Ticket” like in Willy Wonka and the Chocolate Factory the old one with Gene Wilder. It was so much fun.

As always, Barry’s perseverance and can-do attitude really inspires me and makes these vids so much more enjoyable than they’d already be otherwise - I love that he shows each step even if something didn’t quite work and he had to redo something. So genuine and fun. These homemade Kit-Kats look absolutely stonking!

The 4 bar kitkats always remind me of my Grampy - used to have them every week when we went over. Always used to be a treat when we came across a bar with 100% chocolate - no idea why lol

Barry - if you had a pasta maker - that's almost the ideal thing for making the wafers. The actual wafer machines work just like the pasta machine except with patterned rollers.

This is a brilliant recipe! I'm 39 weeks pregnant and kitkats have been one of my (simple) cravings! I guess it's never too late to give it a go🤣 ❤ And looking forward to the malteasers video! I love them but as I live in italy I only get to eat them either when I come to the uk to visit relatives or when i bring my year supply home 😅🙈

It’s funny as if you watch the giant Kit Kat video from years ago he did that. I’m assuming he didn’t want the extra complexity while making the wafers...but he was always going to have a load of waste wafers to use :)

You can get make extract from any homebrew beer shop. Wilko sells it in the homebrew section too. It's sometimes called spray malt.

There was a programme on last year called snackmasters where they made kit kats. They layer between the wafter is not chocolate. It's blended broken kitkats

Those ginormous Kit Kat's looked lush. Congrats! Been years since I bought one, but for some reason the chocolate always tasted nicer on the four bar version compared to the two bar KK.

You can get a table top Pasta Dough Roller machine, you put the dough into the top twin rollers the same width as the rollers and turn the handle and the rollers will do the dough to the thickness you have set on the rollers, they even have a cutting unit below that cut the rolled dough in to strips! Would save you allot of time and trouble!

If you put the mold in hot water for a second, It should melt the edges and come out cleaner. But DON'T leave it in too long or you will melt the chocolate. This is how I get chocolate out of muffin cups when I make home made peanut butter cups without the paper.

@@AzuraeLyonheart There was an Indian village that had to drink stagnant water because Nestle literally stole their water and sold it back to them. Just google it. Or are you referring to when Nestle 'donated' a bunch of baby formula to an African country, getting the babies dependant on it, literally killing them as the mothers had no access to clean water to prepare it with? Or maybe you're referring to that time when Nestle tried to have clean water reclassified as a need instead of a basic human right?

What you can try next time for making wavers, if you want to roll them out even thinner you can but them in between two anti stick mat's and than roll it out so the dough wont stick on the roller.

Dont buy a press mate just put another tray on them to press them down a bit. Also if u have a mallet with grooves u can slightly press the dough before putting it in the oven.i think the rough texture holds more chocolate than the smooth one.

If you roll the dough between two sheets of baking paper/clingfilm it won't stick to the rolling pin and, more importantly - you don't need to add more flour to the mixture

Barry have you considered using a traditional pizzelle recipie? They tend to bake super thin and crisp. I personally never have cooked them outside of the pizzelle maker, but it was what popped into my head when you mentioned kit kats!

If your 75% chocolate is too warm, adding the 25% wont temper it sadly.

I'm not a chef/baker, so I'm often surprised at the way you go about re-creating things. I would have thought a batter instead of dough, using soda water in it to help it be bubbly/light, and cooked on a hot griddle. Also, I would have just dipped the wafers instead of the way you did, just dip and stack, then top off with more chocolate. Of course, I might have gotten real lazy and just used layers of cookie crumbs lol.

Thank you for teaching us how to make the wafers! Found this, ""Peanut-Butter Wafer Cake"" recipe inspired by Little Debbie-`Nutty Buddy` sweets... It was a cooking article from the NY Times. I can finally to attempt this cake and adjust the sugar amount a tad. Thank you again.

You should use the broken wafers with chocolate for in-between the wafers. That's what nestle do with their kit kats

Two ideas that immediately come to mind for custom Kit-Kats are: Pink wafer with strawberry flavoured pink chocolate, and Snowball cocktail with Advocaat filling between the wafer and a lime flavoured white chocolate with perhaps some chopped up glacé cherries mixed in. You can get some really nice chocolate bars with an kind of Advocaat fondant filling in the international section of some Tesco stores which have a high enough alcohol content that you need to be over 18 to buy them.
